It’s that the entire region is filled with little roadside barbecue stands that have smokers out back and serve plates of ribs the size of a Kentucky Derby hat. Pit Stop Barbecue on the Dorchester/Mattapan line may be the only one of those we’ve got inside 128, but it’s a damn fine representation of the genre.
