The Mexican-born chef came to study at the Lyfe (formerly Paul Bocuse) Institute, before working in top establishments such as Le Bristol and L'Astrance. Trained by MOF chefs, notably in fishmongery and bakery, he has also worked in Japan. Although his techniques are purebred Gallic, his inspiration is more multicultural than simply Mexican.
