"MAZ operates under the supervision of Virgilio Martínez Véliz, chef of Central Restaurante in Lima, Peru. Through gastronomy, MAZ interprets the abundant natural environment of Peru from the vertical perspective of altitude. Directing the kitchen here is Santiago Fernández Saim.
