The entire à la carte menu is a real treat for any foodie.The chefs are not afraid to use lesser-known ingredients such as oxtail and zander. The intensity of their no-nonsense dishes makes a convincing case for why this overlooked produce is deserving of more attention. Veal kidneys, for example, are served with an irresistible creamy sauce based on a veal stock with a shellfish jus. The zander is candied in smoked butter, topped with zolderspek (smoky bacon) and goose liver, and combined with roasted quince and the strength and acidity of sauerkraut.
