While common areas at Karae incorporate reclaimed building materials from a sake brewery located on the property decades ago, the rooms, ranging from women’s-only dormitory sleeping to executive suites, come in muted, comfortable tones, some with views of the narrow throughways of the town below. Breakfast is served on the first-floor Karae Table, whose menu is dedicated to “f.l.o.s.s.,” meaning ingredients are fresh, local, organic, seasonable and sustainable.
