"The newly opened Banty Rooster with a Southwestern culinary theme comes via Denver restaurateur Delores Tronco-DePierro, and the premises, a stone’s throw from the Jefferson Market Library, offer several airy seating areas. Highlights of a recent meal include a plate of fried chicken skin with a buttermilk dressing that reminded me of Charleston’s Husk, a chile focaccia with house-churned butter, and a pork collar surmounted by a little heap of Hatch chiles (I wish the heap had been larger). Don’t miss the lard cookies called biscochitos, flavored with anise and cinnamon — though here they’re made with butter." - Eater Staff

"Delores Tronco-DePierro is planning a new American restaurant with Southwestern influences called the Banty Rooster, at 24 Greenwich Avenue, near West 10th Street. Dishes from chef John DePierro — Tronco-DePierro’s husband who last worked at esteemed restaurants Rebelle, Miss Ada, and Metta — include pork collar with hatch chile, cotija, and pickled onions; grilled short rib with charred okra and ancho barbecue; and biscochitos (a New Mexican lard cookie with cinnamon and anise) with toasted masa ice cream. The space seats 75 with a dozen at the bar, as well as a private dining room. Tronco-DePierro made a name for herself in Denver for opening Work and Class, a Latin and American restaurant that got two James Beard nods and landed on some best new restaurant lists. With the Banty Rooster, she’s bringing a lesser-seen-in-NYC cuisine that has a rich culture.
