First of all, thank you to Ngan, our food attendant, and the chefs for your effort and service during our dinner.
I truly appreciate A by Tung for the attempt to create a lovely dining experience. The dishes clearly show strong technique and creativity. Ngan also did a wonderful job presenting the story and explaining the special Halloween menu, and we sincerely appreciate how kindly she listened to our feedback.
Unfortunately, the dinner overall didn’t quite deliver the message that Chef Tung seemed to intend. The menu lacked umami depth from start to finish. While the preparation and details were good, the flavors often didn’t come together cohesively, leaving the experience somewhat underwhelming.
Starters – “Thì Thầm”
It would be better to start with a warm pre-bread rather than cold seafood.
Oyster: Fresh and standard.
Amaebi shrimp: Bland even with caviar; texture too soft.
Tuna belly: Refreshing sauce but slightly fishy.
Octopus: The first dish that brought dynamic flavors — it gave me hope for the rest of the night.
Pork Tart: Creative concept, but unfortunately the tart was soggy and not warm.
Parmesan Roll: Luckily helped balance the flavors, though the layout of these three dishes didn’t complement each other well.
Foie Gras Phở: Finally something with umami — the broth was refreshing, but the foie gras completely overpowered it. The accompanying “phở cake” was like a tasteless macaron, and I didn’t quite get the concept.
Oyster (second course): Fresh with a nice texture and great idea pairing it with a cracker.
Fish: The ingredients were fresh and every detail was creative, but I expected more umami and a crunchier texture. The micro portions didn’t complement each other well, and both the soup and the dish itself should have been served hotter.
Duck: The ingredients were well chosen, but the sauce was overly salty.
Fried Rice: Even saltier. I understand XO sauce adds saltiness, but serving it right after the duck made both dishes overwhelmingly salty and unbalanced — nothing memorable remained from the main course.
Dessert: Thankfully, every dessert plate was light, balanced, and delicious — it truly saved the dinner.
Conclusion:
The overall journey felt a bit unmemorable, with a lack of umami in the early courses and an overly salty finish. I believe the menu could be rearranged and refined to better balance flavors and enhance the umami profile. I trust Chef Tung has the talent to deliver truly amazing food, as the restaurant’s concept and presentation promise.
