The Best New Restaurants in the Seattle Area, March 2025

"After 13 years, Ballard’s beloved brunch spot, the Fat Hen, closed in September and springing up in its place just a month later is A Lamb’s Quandary, specializing in… more brunch. Regarding the name, owner Nelson Wong explains that he is the lamb in question, per his zodiac sign, and the quandary is what to do with the restaurant he’s bought. The answer turns out to be to make waffles in all kinds of permutations, like a waffle sandwich with five-spice brisket and kimchi or a waffle topped with maple syrup, ricotta, and blueberry compote. There’s also an elaborate hash brown scramble with optional fried chicken accented with lemon zest and scallions. No lamb on the menu yet, but it’s still early days." - Harry Cheadle

A Lamb's Quandary - Review - Seattle - The Infatuation

"No, this Ballard restaurant has nothing to do with cute fluffy farm animals—they serve breakfast. Specifically all things waffles (an ode to the owner's father) like ricotta versions topped with fresh fruit and five-spice braised brisket waffle sandwiches. We haven’t been here yet, but want you to know this spot exists." - Team Infatuation

This is a very delightful hole in the wall breakfast place that has limited items on the menu, all involving waffles. Their waffles are delicious, the perfect ratio of crunch on the outside with a soft interior. Not too overwhelming in size either. Be sure to reserve in advance because there are limited seating and it's a small restaurant. The staff were very accommodating and incredibly friendly. What to order on the menu is truly a quandary!

This is a cute little brunch spot! We only waited for 5 minutes. The food is really good — I highly recommend the Brisket Sandwich, it was delicious! I'd suggest pairing it with something refreshing, like a black coffee, since the food tends to be on the heavier side. The Benedict was a bit greasy, but still pretty good overall!

Very unique and tasty. The food was really good and everything is handmade!✨ I 100% recommend. Met the owner: the restaurant is inspired by his Chinese Chinese zodiac and indecisiveness, which totally shows with the ram/sheep character(which is aslo SUPER CUTE🥰). The only thing is they forgot our eggs, and my sister claims the toilet was weird (but i think it was fine). Thanks for the amazing food!!!(We got the savory waffle 🧇 , chai🫚, and a grandma vanilla bean latte 🫘☕️) 😋

Google
Checking out Seattle and found this great brunch spot in Uptown! Nelson is the owner and was running the front of house. He was very kind and made great suggestions when I asked. His waffle designed sandwiches are super unique and delicious! The brisket was juicy and then our favorite was the dessert waffle that came with fresh berries! We also tried 2 of the tastiest cocktails we’ve ever had (The Peach Spritzz, & Horchata Colada). The horchata, like everything on the menu, is made in house fresh. Options focus on sweet and savory, but you can focus on one direction if that’s your preference. The spot was definitely worth the cost and we’ll go back as soon as we get the chance! 10/10 recommend!

Very cute and friendly neighborhood spot. Love the outdoor seating options and the attentive, fun staff. Like a lot of things in Seattle, I think the food is overpriced for what it is. The fusion results are fun, but the food is a little oily and the sweet waffle option wasn't crispy, kind of soggy. Matcha latte was mid. It is probably worth going for the vibes and good times with friends!

Cute neighborhood shop and very friendly staff. The food could beat most of the brunch places in Seattle and would be better if there’s more variety in the menu. However it didn’t match the expectation of the price we paid. I loved the novelty brought out by the fusion. I had a little hesitation when ordering salmon hash but it turned out pretty good. The potatoes’ crispiness offsets the soft texture of salmon. Kimchi and sauce buried in the hash brought a freshness in the mouth and balanced out any greasiness the hash would’ve had. The heating didn’t work quite well and it was a bit cold in a winter morning. And it’d be nice if staff could point out the specialties on the wall. Would recommend to friends.

Finally tried this spot this morning. It’s on my favorite block in the city, and is a lovely spot for a weekend (or weekday!) brunch. Top-notch coffee, perfect eggs, loved the gochujang and house made seitan/mushrooms and kimchi. Super warm and welcoming service even on a busy Saturday. Can’t wait to come back. Wonderful option for meat eaters and vegetarians alike!

Kimchi on a waffle? They not only make it work, they make it delicious. The flavors and textures of their dishes are thoughtfully curated. The espresso drinks are fantastic. Great service, amazing food, reasonable prices (especially given the high cost of groceries/food), and lovely atmosphere. Highly recommend. It’s a wonderful local small business.

Yelp
First thing first this place is not the restaurant that previously existed in this same building. If you come here expecting the same menu and and to recapture that prior experience, that's just not going to happen. What this place does have in common with the former, is it shares the same wonderful small café hometown feel ran by amazing humans who will give you an amazing journey with food. The food at a Lamb's Quandary is unique in one of a kind to our region. I've been in twice now and had the best cooked waffle sandwiches that had the most amazing food and flavor combinations available in the area. The coffee the service in the atmosphere are probably best in class. The menu may be simple, but the flavors are so complex and tender that it is worth the journey to stop by. Furthermore, because this place is new, you're almost guaranteed to get a table that is until the rest of you all discover what I have already done so. This place is a hidden gem in a well-known location in a wonderful part of town. But please don't take my word for it. Stop in and experience a truly amazing experience again ran by the most wonderful people that really care about what they're trying to do. What more could you want?

Yelp
This cafe is so cute! The menu features classic breakfast items with a twist. The Nelly scramble with kimchi is delicious: perfectly crunchy and spicy. Great service and very attentive staff.

Yelp
Incredible food, the waffle is so crunchy and the cookie full of flavor but not too sweet!!! My extremely picky 8 yrs old cleaned his plate. Looking for a perfect place for a cute and quiet brunch with young children, this is the place to go.

Yelp
I went there yesterday morning off of a recommendation with my wife and baby for a late breakfast. Let me start by saying that this restaurant is very cozy! You walk in and then they ask you to take a seat and you are promptly greeted for your drinks. The food came out pretty quick, they have a small menu and I feel like that really allows them to produce excellent food! My wife got the scramble and absolutely loved it and I got the fried chicken waffle sandwich. My only request was to have the slaw on the side and they accommodated. Everything was so good there. Bonus points for the owner to come to the table when my baby was crying and gave her stickers!! Would recommend to everyone to try this place.
