After a disappointing first visit to Adalina Prime, the GM, Neal Sage, invited us back to give them another try and experience the level of dining they're known for. After a few delayed emails from Neal, we finally confirmed a return visit for 11/7/25, which happened to be my birthday weekend. I flew in from Seattle to celebrate and was hopeful for a better experience.
Unfortunately, not to my surprise, our reservation wasn't in the system when we arrived. Thankfully, the hostess handled it quickly and seated us right away. I asked for the manager since this was supposed to be a "recovery" dinner, and Alex (the server assistant) promptly introduced us to Mark, a very well-dressed and professional manager who assured us he'd make sure everything went smoothly--and he absolutely delivered.
What followed was easily one of our best dinners in Chicago.
We started with the Clam Chowder and Tomato Soup, both piping hot and full of flavor, plus the Baked Scallop-Cargot and LOL--all fantastic. For mains, we had the City Filet and NY Strip, cooked perfectly and elevated by the fun variety of finishing salts (highly recommend the Red Wine and Smoked Bourbon salts suggested by our amazing server, Ashley). Our sides of Creamed Spinach and Mashed Potatoes were also divine.
We finished with the Strawberry Cake, which was heavenly--especially paired with a glass of 20-Year Tawny Port. Throughout the night, Ashley was warm, attentive, and on point, while Mark checked in regularly to make sure we were happy.
To top it off, Mark surprised me with their Booze Caboose to celebrate my birthday--a perfect ending to the evening.
Huge thank you to Mark, Ashley, and Alex for turning things around and reminding us why Adalina Prime stands out. From the food to the service, everything was exceptional this time. We'll definitely be back!
