A new Korean soup place makes broth that tastes like a granny’s deep, slow boiled soup but with a modern twist.
I tried the chicken broth (with chicken and doenjang) and the beef broth (with beef and chili oil). The broth itself tastes like a true granny style soup that has been boiled overnight. I especially liked the beef broth. The garnishing sauces add a modern twist. I loved the chili oil one. Enjoy the clear soup first for a while, then add the sauces later.
I also tried the fried root-vegetable chips, dongchimi (radish), and Korean beef tartare.
Dongchimi is not optional sidedish if you are having soup. It’s a traditional version but with a new Korean twist, I would say. It’s slightly sweeter and tangy, and the yuzu zest is a great kick. Surprisingly, it goes even better with the soup than the traditional version. I think each person should get their own serving of this.
The tartare is also really fresh and chewy, and you’ll appreciate this dish only if you are accustomed to sushi or French beef tartare.
The root vegetable chip is a simple, straightforward dish that anyone would enjoy, and they are easy to share as a starter.
If two people go, order two soups, two dongchimi, and other shareable sidedishes.
