"Born as a pop-up, Apollo’s sourdough-based bagels have a pleasant tang, some air pockets in the crumb, and a nice crust; the menu is simple—plain, sesame, and everything—and includes a few sandwiches such as one with whitefish salad, pickled peppers, and dill, but be prepared to line up on weekends." - Devra Ferst
"Born in 2023 from a pop-up at Leo in Williamsburg, Apollo Bagels now has four locations across Brooklyn and Manhattan and makes sourdough bagels with a distinct airy interior and a bubbly, crunchy shell. The shop sells only three types — plain, sesame, and everything — and serves sandwiches open-faced; fans like Eunji Lee praise the cream cheese and tomato sandwich and the smoked salmon with cream cheese, capers, red onion, and dill, though she also loves their plain bagel." - Amelia Schwartz
"The bagels here caused a sensation with the first branch of an East Village bagelry opened in the West Village. Its limited selection of bagels (plain, sesame, everything) are a bit different than you might be used to — airier, crustier, leaning toward bread. That makes them perfect for sandwiches, including the best order in the shop, a smoked salmon sandwich with cream cheese and dill. Expect lines, but they definitely move fast. There are now several other Apollo locations." - Robert Sietsema

"An expansion of Apollo Bagels (which now has storefronts in the East Village and West Village) opening a Williamsburg location, with a Hoboken storefront coming soon." - Emma Orlow
"Apollo Bagels' third location is in Williamsburg. The sourdough bagel spot is from the pizza minds behind Leo, and we’ve enjoyed ripping and dipping their hot bagels into cream cheese at their East Village original. We haven’t been here yet, but want you to know this spot exists." - Team Infatuation
