BAK

"Take the stairs to the third floor of this unobtrusive warehouse (you'll need to ring the bell in the evening) to discover this rather rugged yet inviting restaurant with its splendid view over the IJ River. Benny Blisto sets great store by the origin of his ingredients, be it a carrot or ray wing. Locally sourced, seasonal produce is the inspiration behind his creativity. For instance, with slightly tart rhubarb and an exquisite beetroot sauce, he elevates a venison fillet to new heights. An exciting dining experience is guaranteed!" - Michelin Inspector

The 38 Essential Amsterdam Restaurants

"Seasonality, creativity, and simplicity are at the core of Bak, one of the best places to experience modern Dutch cuisine while enjoying fantastic views of the river IJ. Chef Benny Blisto carefully puts together vegetable-focused tasting menus with sustainable fish and game. The wine list is fun and varied, with a good selection of natural wines and reasonable prices." - Monique van Loon

One of the most scenic and beautifully designed restaurants in Amsterdam. The space feels like a cross between a refined atelier (arched windows and gorgeous skylights) and a warm, luxurious wooden cabin—elegant but somehow rustic. We opted for the early bird compact tasting menu, which offered thoughtful and aesthetically pleasing seasonal dishes. The egg yolk and beetroot course was a standout—rich and balanced. A few others, like the milk curds, felt slightly underseasoned in comparison. Maybe they work better in the full tasting menu. Service was excellent throughout—attentive, friendly, and well-paced without ever feeling stiff.

Great degustation menu. Fantastic variety of tastes, excellent service, lovely view of the river. Best eggplant dish in my life 😁 PS. Getting there is tricky due to uninviting entrance to the building.

We had high expectations for BAK given its reputation and fine dining setting, but unfortunately, our experience was underwhelming. The tasting menu, priced at €97.50 per person, consisted mostly of vegetable-based dishes, with only two very small portions of fish—each no larger than the palm of a hand. While the plating was elegant, the flavors lacked depth and didn’t leave a lasting impression. The pacing of the meal was also disappointing—eight courses took over three hours to complete, which felt unnecessarily long. Service was polite but not particularly refined; plates were often cleared without a word, which felt abrupt and not quite up to fine dining standards. If you’re a vegetarian or someone who enjoys plant-forward cuisine, this place might suit you better. But for those expecting a more balanced or memorable tasting experience, BAK may fall short.

BAK was outstanding! My friend and I were in Amsterdam for 4 days and I had wanted to go for a tasting menu - after researching, Bak was the place for me, and we really were not disappointed. The food was outstanding, with each meal being explained in detail - suppliers, locations, tastes. The service was above and beyond, nothing was too much trouble, they had noted that I didn’t eat seafood, therefore I didn’t receive any. One of our dishes was quail, and my friend wasn’t overly keen on game which he didn’t mention, they offered him another dish with no issue (he ended up eating the quail as it looked delicious!). Just a couple of shout outs to the dishes - the beetroot was insanely good, the stout and plum dish and the hollandaise was just incredible….mind blowingly good. We were there for 4.5hrs in total and no one seemed sick and tired of us ha! The whole meal was timed perfectly and we had no complaints - we will 100% be back on our annual trip next year, and the years to follow. Thanks so much to the team there!

Cool industrial premises - view to the harbour. Experimental menu with fresh local ingredients by season. I loved bitter vegetables. Also two fish dishes in the menu were well-prepared and presented. Surprisingly, 2/3 cheeses in the cheese plate were from Belgium :-). Recommended wine was spot on. Staff relaxed and amicable. Groovy playlist fitted to the atmosphere.

Good attentive service during our meal, innovative dishes and nicely presented, seasonal menu. Nice view by the sea. Tho the entrance was a bit hard to find.

Let’s start with the wine, it’s all natural wine with the acid and funk that follows this… it is not stated anywhere that this is the only wine they serve, this is for me a negative. You guessed it I do not enjoy this hipster juice that is all hyped up, please serve options for us that need something good to pair with the food. Food was okay, a few dishes that were standout. Had a nice oyster as a start of the meal. Not professional that our main dish was forgotten, and it seemed like the kitchen had to fire up again after they had stated closing/cleaning. Service was good, always someone available if anything was needed. The dishes and wine were presented. What makes this place seems to be the location, and that’s it, all in all would not come back. Prefer to have better value and wine for that amount of money spent.

Highlight was the location and view if your are lucky enough to sit at the window. Food was fresh and service was friendly. However pacing of the food deteriorated quickly as more diners arrived. Still an overall pleasant experience
