"Located inside Beaubien Street’s bowling alley bar, Notre Dame des Quilles was the original home for Pizza Bouquet and left a strong impression on owner André Theriault: he recalls fond memories of a front-row view of the bar’s Sunday-night karaoke and patrons’ late-night bowling antics. While he loved working out of NDQ, the space was very limiting — in that setup he could only do a maximum of around 60 pizzas a night — with insufficient refrigeration for fermenting dough, a too-small oven and electrical constraints that prevented adding appliances." - Valerie Silva
