"True to the name, Third Eye Grind combines three beloved liquors — Kahlua, Licor 43, and Frangelico — with Grey Goose vodka and espresso. Executive chef Chris Santos spearheads the kitchen at this vibrant Cosmopolitan hotspot, where plates of empanadas or brisket bao buns pair with other cocktails straight from New York. A small sugary treat like a macaron might be perched atop the espresso martini for an added delight." - Jennifer Smith
"The fruits, pastries, and treats that sit inside the gondolas of the Wonder Wheel are left to the chef’s discretion and rotate (pun intended) often. But the sweets inside are reliably as exciting as the wheel is charming. Think chocolate-covered strawberries, miniature whoopie pies, doughnut holes, and crunchy nut brittle." - Janna Karel
"At first glance, Beauty and Essex at the Cosmopolitan of Las Vegas appears to just be a functional pawn shop. But step beyond the jewelry cases and wall-mounted guitars and you’ll find yourself inside a spacious dining room with a New York feel. It’s just the right setting to order the Wonder Wheel dessert, a small ferris wheel with a treat on every gondola." - Janna Karel
"Reservations may be hard to come by, but the bar generally has ample open seating; the Vegas outpost feels cool, luxe, and glamorous without the ear-splitting soundtrack that can plague restaurants of that genre. The menu is mostly appetizers, which is just right for picking over small bites with friends. This visit called for grilled cheese and tomato soup dumplings: "Six soup spoons are filled with creamy tomato soup and joyously crispy bites of cheesy dumplings at the center." The Green With Envy cocktail is herbaceous and a touch spicy with jalapeno and cilantro — even considering I ordered it without alcohol for the last week of Dry January. But it was the Wonder Wheel that had no fewer than a dozen other customers stopping at my table to ask about the macarons, small iced cakes, fruity candy squares, and bite-sized pastries that filled the eight gondolas on the Ferris wheel set at my table; festooned with string lights and a wheel that revolves when pushed, the wheel is ideal for anyone who says they "just want a bite" of dessert. — Janna Karel, Eater Vegas Editor" - Janna Karel
"Step into the pawn shop inside the Cosmopolitan Las Vegas and you’ll be transported into the dark and moody interior of Beauty & Essex. The Las Vegas location of the New York restaurant is chic and vibey, just right for a celebratory dinner of steak tartare toasts, yellowtail crudo, and dumplings of grilled cheese, smoked bacon, and tomato soup. Just don’t skip dessert. The Wonder Wheel ($46) is a miniature Ferris wheel brought to your table with each gondola filled with different desserts. The treats are the chef’s choice — but expect macarons, bites of mousse, and cookies." - Janna Karel
