A Four-Day Culinary Journey Through Bordeaux, According to The MICHELIN Guide

"Overlooking the vineyards, this One-Star table highlights Chef David Charrier’s produce-first philosophy—estate-grown carrots paired with dry-aged veal and morel mushrooms simmered in Bordeaux wine—rooted in a garden where vegetables and aromatic herbs are cultivated (“Since we started growing our own vegetables and aromatic herbs in our garden, I think that preparing and cooking vegetables best represents my philosophy,” he says). Pastry Chef Adrien Salavert has earned special recognition from the MICHELIN Guide for creative desserts like Jerusalem artichoke with passion fruit and caramel mousse, and he has also perfected classic local cannelés with their eggy, rum-scented interiors and deeply caramelized crusts." - The MICHELIN Guide

"Perched on a small hillock, the highest point of Saint Émilion, this prestigious château lives up to our expectations. In this special place, the pared-down dining room opens onto the magnificent vineyard. Here, preserving biodiversity is a priority and every effort is made to respect the natural environment. In line with this ethos, chef David Charrier concocts wholesome food by drawing on perfectly mastered techniques. His preparations are precise; his dishes highlight produce from the estate and rigorously selected small-scale producers. The chef is capable of elevating a simple bouchot mussel with a fine seafood jelly with saffron, chanterelles, a chiffonade of Mexican tarragon and a shiny mouclade sauce: an incredible feat! The service fosters a certain joie de vivre and the wine list allows you to indulge without breaking the bank." - Michelin Inspector

Amazing presentation with delicious food. Desserts were of course excellent. The cheese cart had a wide selection. Unfortunately I did not try any as I was too full. Those interested in cheese may want to go for the menu or get à la carte instead.

I had the most incredible experience at Les Belles Perdrix. The food was truly the best I’ve ever had, every dish was crafted with such precision and attention to detail, balancing flavors beautifully while showcasing the finest ingredients. On top of that, the setting was simply breathtaking, with a stunning view that made the meal feel even more special. The combination of world-class cuisine, impeccable presentation, and the serene atmosphere left me in awe. This is a place I will absolutely be coming back to, and I cannot recommend it highly enough.

Excellent food, wine and service. It is a one star restaurant that should have at least two stars. The Troplong Mondot wine is priced at retail!!! The service is charming, multi-lingual, and passionate about what they recommend. The architectural and interior detail is inviting , relaxed and memorable. I shall return.

We dined at the restaurant: Best food experience I can remember. Each dish was a journey. Wonderful service from François, Mathieu and Andrea. I also think it's exceptional value for the price.

Our meal at Les Belles Perdrix was nothing short of exceptional. From the moment we arrived, we were greeted with warm, attentive service that set the tone for a truly memorable evening. The setting is lovely — perched among the vineyards, with a serene and elegant atmosphere that perfectly complements the refined cuisine. The food was exquisite, showcasing creativity, precision, and a genuine respect for local ingredients. Every dish we tried was beautifully presented and full of flavor, with an outstanding balance between sophistication and heartiness. The wine list, as expected in this part of France, was impressive and very well curated — the sommelier offered thoughtful recommendations that paired perfectly with our meal. Service throughout was professional yet friendly, making us feel genuinely welcome and well cared for. There’s a lovely sense of calm and quiet luxury to the whole experience, and you can tell the team takes great pride in what they do. Les Belles Perdrix is the kind of place that reminds you why dining out can be such a joy. We left feeling truly satisfied and already looking forward to returning. Highly recommended for those in the region seeking an exceptional meal in a stunning setting.

Absolutely incredible experience and lunch. The ambiance, the vineyard, the outdoor patio and dining room are all amazing. The service was friendly and professional. We noticed and appreciated the choreographed mirror service of our dishes. Large selection of wines, we chose a great Chateuneuf du Pape that's more to my taste. Totally worth a trip if you are in the Bordeaux area.

My wife and I had lunch at Les Belles During a wine tour day in Saint-Emilion. The food and service were absolutely impeccable. Great wine selection. And the view from the Terrace overlooking the vineyard was a small slice of heaven. Highly recommend a visit if you’re in the area.

We had the best time at Chateau Troplong Mondot, a well rounded experience having stayed at the Keys, a dinner at Les Belles and a tour of the vineyard + tasting. Everything was incredible. Julie and Claire were amazing hospitality hosts, the Art Studio where we stayed was calm, serene and clean & it's easy to get into the city center. Highly recommend!
