In fact, if you only get seafood, the guy sitting next to you might insist that you’ve ordered wrong. The smashburger at Bill’s Oyster has its own following, but it’s not consistent. It might arrive oversalted and oversauced, or underseasoned. It will always, however, arrive at $21, which is a steep ask even with the fries. When it’s good, it’s a perfectly fine smashburger. The truck’s lineup includes burgers, fried chicken sandwiches, hot dogs, and vanilla soft serve; hours are 11 a.m. to 9 p.m. Saturday and Sunday, and 3 to 9 p.m. Thursday and Friday.
