You can tell that the large team really enjoy their task. I would describe the overall atmosphere as professional and, above all, very engaging. ●● Food – 4.9/5 – outstanding: ● Flavors (range, depth, composition, complexity, harmony/balance, accessibility, tension, etc.): 4.9/5 ● Level (thoroughness, craftsmanship, originality, exclusivity, versatility, consistency, etc.): 4.9/5 ● Choices: 4.7/5 ● Comment: I thought the food was outstanding. I would particularly like to highlight an intermediate course with sweetbreads, the cheese selection, the dessert with pear and an “after-dessert” with pineapple, all of which I found excellent. ●● Beverages, mainly the wines – 4.8/5 – very good: ● Taste (depth/range, length, complexity, balance, accessibility, elegance, intensity/subtlety, etc.): 4.8/5 ● Level (versatility, exclusivity, novelty, authenticity, originality, consistency, simplicity, etc.): 4.8/5 ● Did the beverages (mainly the wines) match the dishes?: 4.8/5 ● Choices: 4.9/5 ● Comment: I would particularly like to highlight a Riesling from the Nahe region and a Pommeau from the restaurant’s region, both of which I found outstanding. ●● Presentation of the food – 4.9/5 – outstanding: ● Procedures at and around the table (attunements and explanations, elements added/changed, service and staffing intensity, involvement of kitchen team, orchestrated dish presentations, preparations and dishes (partially) built up at the table, etc.): 5.0/5 ● Textures and temperature differences: 4.8/5 ● Colors and decorations: 4.9/5 ● Timing and sequencing as well as portion sizes: 4.8/5 ● Special effects (positionings, DIY-effects, sculptural or thematic elements, surprises, color and motion effects, fake effects, olfactory effects, fog or smoke effects, etc.): 4.9/5 ● Comment: I was quite impressed by the “tableside”-procedures. The team does not only always give nice attunements and explanations, they also add components tableside in most cases and (partly) build or somehow arrange/prepare at the table what they serve in many cases. Moreover, the team takes full advantage of the large premises by taking their guests on a literal journey: we ate and/or drank something at seven different “locations” spread over three floors and five rooms, as well as in front of the door. Please don't think that this was hectic—on the contrary, there was room to relax and chat in the lounge, for example. We spent most of the time at the table anyway, and the team used the other stations to engage guests with their products and philosophy (versatility, regionality, seasonality, refinement etc.). ●● Presentation of beverages – 4.9/5 – outstanding: ● Procedures at and around the table (explanations and attunements, etc.): 4.9/5 ● Quantities poured as well as timing in relation to the dishes: 4.9/5 ● Comment: All accompanying non-alcoholic drinks, which the restaurant also offers and which my wife ordered, were elaborately prepared at the table. ●● Price – 4.8/5 – very good: ● Price-performance ratio for food: 4.8/5 ● Price-performance ratio for wines and other beverages: 4.8/5 ● Price transparency and correspondence of the expected to the actual price (simple, complete and unambiguous price information on the restaurant's website and in the menu, etc.): 4.7/5 2|11|10

Waauw What an experience We enjoyed a fantastic lunch Food was fabulous. It is one of the best places I have ever been in the Netherlands. The food is not just food, is a piece of art. The taste if each food or wine is espectacular that you will never forget. No need my recommendation, but of course, it is a must go when you are in Limburg.

Unbelievable experience - stayed for 5 hours, fantastic sommeliers even the non alcoholic pairing was excellent. Thanks Nouri, Remco & Mattijs!

The team at restaurant Brut 172 by Hans van Wolde takes you from the moment you enter to take a look into their created world of taste and experience. Every sense must be activated to make the experience your own, which is supported by the great imagery in which the sommeliers are highly developed. A great experience richer, for which thanks.

Definitely in my top 3 places to eat. Not cheap but the whole experience and the food made it worth it.
