This unassuming diners’ heaven sits on a restaurant filled street in Wynwood. With back-to-back doors leading to a variety of cuisines, one might easily overlook this hidden gem. Luckily I encountered them via Miami Spice, and not only did it not disappoint, it far exceeded my expectations. Offering a tasting menu including beverage pairing of sake, wine or non-alcoholic beverages for $42 each was a gift. Even dishes such as the shishito peppers which you can typically find in any Japanese restaurant, were magically elevated with a side of carrot ginger ponzu dipping sauce. Each dish was carefully and thoughtfully prepared and plated, many accompanied by flavor-infused sauces taking the ordinary to the extraordinary. Between the yellowfin tuna sashimi, the street corn with generous bonito flakes, and the grilled brocolini with crispy bacon and shallots, the flavors continued to intensify. We opted for the tempura beech mushroom dish for a very reasonable upcharge and were so enamored by this culinary delight that my husband had to thank the chef who stood within earshot of our table, fully invested in every dish that left the counter. Chef Zach West very obviously puts a lot of passion into his dishes and the kitchen staff works seamlessly to help deliver his vision. Their laid-back, friendly vibe creates an inviting dining experience with equally helpful servers leading the customer-facing charge. Maria H. was our very attentive server and offered great recommendations throughout our meal. The Wagyu skewers were tender and perfectly cooked, and arrived with salt flakes, wasabi, a slightly spicy yuzu sauce and chimichurri. The yellowtail snapper skewer was freshly basted in brown butter ponzu and had a lemony zest. The last skewer we tasted was the chicken thigh, and while I am usually turned off by this cut due to its fatty texture, the protein was free of fat and deliciously flavored. The last entree was ramen and a duck hot pot, the latter which we had to take home because we did not want it to go to waste. And finally for dessert, we were surprised with a black sesame ice cream sandwich which was so unique that I ate my half and then some. I highly recommend Buya for a delectable meal that will leave you wanting more, so much so that I already made another reservation for dinner.
