Caroussel Nouvelle

"In the attractive Hotel Bülow Palais in Dresden's Baroque quarter, the bistro and winter garden have been combined in the Caroussel Nouvelle, with a stylish interior by star designer Carlo Rampazzi. The "Classics" menu is available for lunch and dinner, along with two "Gourmet" set menus (one is vegetarian) in the evening – also with à la carte options. Palais Bar and Cigar Lounge for aperitif or digestif." - Michelin Inspector

Very enjoyable cuisine with good service in a misfit ambience. But then again, the installations may come into fashion in a few years, but the food is already. Good wine pairing and nice choice of local wines. The food is worth the trip to Dresden, which is short of good restaurants. Would be nice to have more orange wines on the list. People, try orange wines, they are as complex as we are. All of us :)

Food and atmosphere and wine (Volnay) all great but the feeling that the parents have left the teenagers to run the show. They were all very sweet but… It was 40mins after we arrived that we got our bread and wine and then had an hour wait between starter and main. Shame because it could be amazing.

We had the five course gourmet menue - with some swaps from the vegetarian menue to also test it and a great wine pairing with it. Expect five courses to be 110 euro plus 38 euro wine pairing - and to a great evening here! Intrigued by the idea of a vegetarian Foie Gras I went for it as a first starter: the texture was terrific - quite close to the original and the combination with the pepper sorbet was just great. Nice start of the evening. On the regular menu was the smoked eel with a great cucumber variation to go with it. The dish came with a great South African sweet wine. The Guinea Fowl soup was next with a Guinea fowl praline with truly great flavor and the essence has an exquisite strong taste. The vegetarian version was a fennel soup with a delicate Yuzu gel in the essence that proves to be great experience - the yuzu slightly overpowering the fennel but the combination is really an eye opener Then a nice Breton lobster tail with an upmarket version of the “Leipziger allerlei” … especially together with the German Chardonnay a great combination to enjoy some proper done dish That Saxon Saddle of venison (actually the more precise name is “Maibock” as there is no proper US/English word for the local game “Reh”) was the star of the evening - perfectly to the point, with a gorgeous sauce made to perfection. What a culinary treat !! The red wine that came along was full bodied and boasted with berries. To round things off, the rhubarb with a great Creme of Tonka and Mascarpone - what a nice blend of taste and flavors to finish a great menu. Generally to point out positively: we had a nice, pleasant and knowledgeable professional service which is not anymore guaranteed these days. Next to the two gourmet menus you can select from a regular a la carte selection too. So go there if you want to spend a nice evening with great food in a relaxed but still well catered for restaurant in the middle of a classical district of the town.

Service excellent, but actual flavours slightly confused. I had the truffled cauliflower and the orange creme brûlée and especially the cauliflower was great in theory but not very well executed (egg yolk consistency was off and the currant sauce did not work in my opinion). The Creme brûlée was decent but the orange and plum were also not a match made in heaven. The bread was quite good though. All in all, I would’ve expected a bit more from the food, but the staff was remarkably good!

Overrated and overpriced. Had duck breast which was tasty, but overcooked. Not what one expects in an restaurant of this level. Service was also below expectations. Finally, beware that they charge no show fees if some guests cancel last minute. This is something I find extremely rude. I won't return there.

The lovely food was let down by really terrible service tonight. We were left alone in an empty dining room and basically forgotten about. We had the 5 course gourmet with the wine match and 3 of the wines were poured after we had our plates. It was terrible coordination between the kitchen and the floor. I asked the waiter for a break to go the bathroom and have a cigarette but when I got back to the table the dessert had been served and the ice cream had almost melted. Also, the wine glasses smelt like cologne. Trying to leave was just horrible. We had to ask for our bill 3 times and when we finally got bill (20 min wait) I paid cash and the waiter presumed we would tip €45 (the change) I had to ask for the change (which was embarrassing) just on principle. We were left at the door waiting for our coats but were ignored (again) we ending up finding them ourselves and left. No one said goodbye - it was horrible. €300 just wasted.
