"Chef legend Javier Wong has been perfecting the art of cebiche preparation for more than 50 years — which justifies the hoops you have to jump through to dine on his food. His humble restaurant of six to eight tables in the La Victoria neighborhood (which is also his home) has no sign, no walk-ins are allowed, and reservations must be made for lunch from Tuesday to Saturday. His cebiche is worth it, with clean, vibrant flavors from a few excellent ingredients. He only uses Dover sole, which he delicately douses with lime juice, salt, and pepper, before topping it with thinly sliced red onion and chunks of perfectly cooked octopus. While other chefs might fuss with sweet potato, corn, spicy chile, or lettuce, there’s none of that here. Watching chef Wong prepare the most incredible food in front of you! Difficult to book but worth it! The food was amazing. Fresh ceviche and then stir fried chifa fish! Wow. Worth it. Make the journey. Visit and enjoy the fresh flavours and amazing food!

one of a kind experience. there are a lot of very nice restaurant with world famous chefs' names attached to it, but it's only Chez Wong that guarantees that you will always see the chef and taste what is cut by his knife. probably the best ceviche in town.

This place is worth visiting as a landmark of the culinary world. It is necessary to call in advance to make a reservation, though I note that I called at around 11:30am and got a table for 1pm the same day on a Tuesday (and there were 3 tables empty so I don’t think there is much to fret about to get a reservation). It seemed to me that there is a single seating - 1pm - so you should show up then (as opposed to trying to make a reservation for 1:30 or 2). They only take reservations the day before. Upon arrival (it is a discreet location as there is no sign), you are seated and are soon greeted by a friendly waiter who will take your drink order. Chef Wong comes up shortly thereafter. The ceviche was excellent and the best I had in Peru. You can take a picture with him after that course. The next two courses were stir frys with fish. Based on previous Google reviews, it seems that the stir frys change pretty frequently, so you can never be sure what you are getting in advance. You can choose to only have the ceviche (just ask for the bill after it is served) or one or two following courses (the waiter will ask if you want another course). The stir frys we had were certainly very tasty, with a fruity flavour that emerged. They were however quite similar to other stir fry Chinese dishes in North America, so if you are on a tight budget, stopping after the ceviche does make sense. (Though perhaps try at least one of the stir frys for the true fusion environment). The bill is simple - 75 soles per person per course. For three courses and two people, that amounts to about 450 soles, which is pricy, but then again you are paying for the experience of visiting the best of the best in the world of ceviche.

When I watched Anthony Bourdain with Chef Wong on TV 8 years ago, I knew this restaurant is the one to visit. Finally, I come to Lima to visit Chez Wong. Everything was awesome. Ceviche was excellent. All foods were awesome. This visit is my highlight on this trip.

It is a quite good place to eat a very fresh ceviche made directly by the hands of chef Wong. The food is fresh and tasty, specially his famous Lenguado ceviche. The ambiance is not very comfortable and the service is regular. The major problem is that the price you pay is compared to high end restaurants with fancy ambiance and service. So it is not worth the money, but I recommend at least one time to see the chef in action!

Some of the best ceviche I’ve ever had. It was great watching your food being prepared in front of you. Chef and staff are amenable to pictures. Awesome seeing Anthony Bourdain’s picture on the wall. Portions are small if you’re used to American sizes for sure. Loved the experience definitely stop by.

The food is not bad, but didn't live up to the reputation that precedes it. The dishes are cooked communally, so it doesn't seem possible to customise it to one's taste. Given this, the dishes are generally cooked overly salty for my taste, which seems to be often the case for Peruvian food. I definitely have had better cerviche than this, and so did some other patrons whom I spoke to while there. The fish is really fresh though. And for the second cooked fish dish, it was done really well. That is, tender white meat, which definitely requires master-level skills to achieve such perfection over a fire. What's a pity is, again, the overhype granted to this place. Further, I would say that it is totally not worth the price.

Chef Javier Wong is known for his incredible and uncompromising ceviche and his flaming wok. The quality of the ingredients paired with Chef Wongs talent makes this once in a life item meals you have to have!!!
