Seattle’s New Restaurant Openings - Seattle - The Infatuation

"The former Plum Bistro space is now home to Colibri Mexican Kitchen, an upscale Mexican restaurant with nearly as many margarita flavors and tequila options as there are dishes. They're open until 10pm on weekends, making it a promising dinner option on Capitol Hill for enchiladas, pollo en mole, and chile relleno before a big night out." - kayla sager riley, gabe guarente, aimee rizzo

I cannot say enough great things about Colibrí. Not only are the vibes immaculate, the service is impeccable. Celeste, the owner, is a doll. She does it all, including waiting tables. The food is fantastic and the salsa is homemade. The margaritas are strong 🌈 Highly highly highly recommend! ++++++

Great new restaurant in Cap Hill! Ambiance was super cute and welcoming, the staff were excellent and the food was great. If you live in the Seattle area, you know how difficult it is to find good Mexican food! (And they have vegetarian options, yay!) Portions were large and lots of options! I had steak fajitas which was amazing. My friends LOVED the queso dip. This is a great place for a date night, casual brunch, lunch or drinks with friends. Totally recommend!

Visited this lovely establishment recently, on a Saturday afternoon. I think they are on soft opening and will be doing a grand opeing soon. The service was great multiple people checked on my table and made sure we were doing okay, the drinks were great, the mojito tasted amazing. The food was delicious I had the shrimp tacos and the plates are very full so you shouldnt leave here hungry. I enjoyed eating here and I recommend you try it out even if its just for appetizers and drinks!

An excellent new family-owned restaurant in the former Plum space on the hill. The platters we tried were plentiful and really well made. They even have vegetarian options. Great happy hour options. The Jamaica was great, not too sweet, and the margaritas are STRONG. The staff is very welcoming too. So happy they’re here!

I first saw this restaurant post recently and I had to try it.. as you arrive it feels such a good friendly vibe.. we got a table right away and our server was so kind that immediately we felt truly welcome. To start we try out the house special drinks which were just fabulous.. our appetizer were just perfect and tasty. our food was just great; simply delicious..and when we thought we were done our desert made our day. Over all we love it ..prices are in the range and affordable and definitely we will be back .. Colibri Mexican Kitchen has become our favorite place to go for delicious Mexican food.

This is the new Mexican spot that took over Plum Bistro (closed down by the owner after 20 years :( ). Got Vegetarian Nachos, the Mar y Tierra, Vegetarian Enchiladas, and Churros. I had the Mar Y Tierra and split the Churros. Mar Y Tierra The meat was okay, I got the steak and prawns options. It has too many mushrooms for my liking. The meat was bland, and I didn't care for the seasoning on the prawns either. Tortillas and beans and rice and guacamole were food though! And who can go wrong with sour cream! 5/10 Churros These were well fried and the vanilla ice cream was yummy. But I have a spot spot for Churros and sweets in general. But this was a good dessert. 7/10 Price for me doesn't match up to the food taste personally with the Mar Y Tierra being $30. Come give this place a try but personally not my favorite. My date enjoyed her vegetarian enchiladas though and said the nachos were good! Overall 5/10⭐

Google
Easily my go to spot now in Cap. This is also the place to go for a fast and friendly dining experience. Tuesday for lunch I came in with a stroller. We stayed for around an hour and a half. The chips & salsa were a delight! Finally a Mexican restaurant in Seattle you can count on to deliver the heat and flavor!! Also, the veggie quesadilla was quite massive, and very tasty! I will be coming back very soon “)

Yelp
Read about this new opening (just two weeks ago!) in the old Plum Restaurant space, and it didn't disappoint! With the front garage doors open in the summer warmth, Colibri is perfect for people watching on 12th Ave while sipping a gorgeously made margarita (hint: try the weekly special margarita!). The food was comforting, like the family-run Mexican-American restaurants you remember as a kid, with both the verde and roja sauces adding a welcome kick to each dish (hint: on some plates you can order all three - roja, verde, and mole). The service was excellent -- attentive and personal -- something of a rarity, it feels, on the Hill lately. I will definitely be coming back to check out the DAILY (yes, even weekends!) 3-6pm happy hour, which looks to have fantastic food and margarita specials. Go check Colibri out, before it becomes too busy to get in!

Yelp
The last few weeks, I have had Mexican food at least 5 days a week. I love Mexican food and try to check out new places as soon as possible. Ironically, we passed this place last week on our way to another Mexican restaurant, so a subtle reminder that any restaurant could be right underneath your nose without you knowing. Without a solid website, it's hard to tell what's going on here. We wanted to try happy hour, but no details were online, so we had to call for hours and just assumed they served food. They did, they had a limited menu, and we tried a few items. First we had Chips and Salsa, At $7, it was overpriced, especially when the portion was small, but I will say, the chips were served hot and that is something I have only seen a couple of times in my entire life. The salsa was flavorful and had bite, so it's clear these people are making authentic recipes. We also had the Taquitos. The 4 small pieces equaled the size of what I would consider a single taquito, but it was an A+ on flavor. I'll also say, at $7.50, it's not a deal, just a much smaller portion of a menu item. Last, we also had the chicken street tacos. Decent but not as much flavor as I expected. Honestly, I wouldn't do it again. One issue that remains is the rice, I would love to return for a full meal, but the rice appears to be infested with peas, carrots and other veggies. I hate this and I think there is a reason most restaurants don't do this. If we do return, we'll ask about the rice. Everyone else dining while we were there had happy hour items as well, so we couldn't see rice coming out of the kitchen. I'd give the food a solid A, however price and portion are both a D. Service was friendly, but very slow. Our server flat out disappeared, and we didn't see him for more than 10 minutes and what's worse is we were his only customer. There were two servers and two tables, by the time we left more people showed up, but even then, it was 4 tables. No excuse for the service not to be more attentive. Ill be honest, based on this, we didn't tip well. You have to provide service and the same way some hand out 5-star reviews, we tip based on service and this place came up short. No one was rude, they just acted like they didn't care we were there. I think you will find something on the menu you really love, but if you consider price and portion, you will certainly question why the portion was so small or why you are paying $7 for a starter everyone gives you for free. The website says parking is validated. There is a public garage across the street, but we parked on the street which was complete luck. You may want to call ahead about parking. I assume that is the garage you use, but the website doesn't have details and we didn't ask the person we spoke with when we called ahead, because they appeared to struggle with English. Improve the service and value of what you serve and you will be in that 4-5 star range. Chicken, rice and beans should always be affordable.

Yelp
Collibri salad ... perfecto! Carne Asada, Enchiladas, Pollo Asado, Beef Burrito & Pollo Taquitos all were excellent as well. Presentation and taste 10, 10, 10 ! ! ! The setting was perfect, roll up door added to a sidewalk café atmosphere. The service was top notch, exceptional.

Yelp
This is honestly the first Yelp review I've ever written. I love Mexican food. I don't find enough of it in Seattle. This just opened right by my office, I literally try to go daily it's so delicious. Everyone who lives within 10 blocks of here should patronize this restaurant at least twice a week. Wonderful service, family owned. Delicious food. I'm in nyc this week and I've thought several times about lunch at Colibri when I get home.

Yelp
The service, and staff are amazing and friendly. The cocktails are delicious and refreshing, and the food is a step above your typical Mexican restaurant. Highly recommend!!!!!

Yelp
Wow! What a great find! came in with some friends for dinner and drinks and we're not disappointed. The service was fantastic. we were seated and attended to in a matter of minutes. The food was incredible. Great takes on traditional Mexican food favorites! We loved the vibe, the decor, and over all atmosphere. Will definitely come back to enjoy again. Highly recommend!!
