"Copal is a new Mexican restaurant in Pioneer Square that probably spent a few months too many on its interior design. The space is somewhere in between a five-year-old’s piñata party (but with more alcohol) and the living room of someone who watches a lot of “desert chic DIY” how-to’s. If you removed the furniture and replaced it with racks of boutique clothing and whimsical measuring spoons and displays of artisan rocks, nobody would notice. But like Halo Top and all-natural deodorant, Copal is a very pretty face with not a lot of substance to back it up. The menu is pretty basic, and not one we’d recommend if you’re wanting authentic Mexican food. Some dishes are plain but fine takes on classics, like the guacamole that they call a “smashed avocado plate” (which doesn’t come with tortilla chips, because those don’t exist here), and the street corn that needs a Clueless-type intervention where the popular elotes teaches this one how to look and behave. On the other end of the spectrum, the roasted chicken has so much cumin that it’s unclear whether that’s intentional or an accident. That said, not everything at Copal is disappointing. A couple of saving graces come in the form of killer barbacoa tacos and a Campari-tequila slushie that we always want to be sitting poolside with. If you do end up here, these things will make you happy enough - but we’re talking about tacos and slushies, so of course they will. We wouldn’t go out of our way to eat here unless we had a situational reason to, but Copal does have some advantages in that department. An early-in-the-game date would go well over a couple of snacks and margaritas, it’s a convenient place for happy hour with coworkers, and the setting would be great for that engagement shower you unwisely took charge of planning. If you go in knowing what to expect, Copal is a perfectly acceptable spot for any of those occasions. At the very least, it won’t make you angry enough to throw something at a wall. Unlike a pint of Halo Top ice cream. Food Rundown Watermelon Salad Cubes of watermelon with cucumber, jicama, mint, olive oil, and little slivers of some kind of fresh green chile. It’s nice on a hot day, but the olive oil didn’t really stick to anything except the bottom of the bowl, which made everything just taste like a bowl of raw produce. Smashed Avocado Plate This is essentially guacamole that’s been stripped of its fun qualities and replaced with queso fresco, fresh radish slices, and local flour tortillas. It’s low on the lime, onion, cilantro, and excitement, and needs chips badly. If you’re here and you can’t continue the meal without some form of avocado in your stomach, get this and strategically save some for your tacos. Grilled Corn Corn with jalapeño aioli (didn’t taste like much), cotija cheese (there wasn’t enough), cilantro, and too many flicks of the wrist with the shaker of chile powder. Queso Del Horno The chorizo in this is pretty decent, but the puddles of grease are too puddle-y. Barbacoa Tacos Our favorite thing here: the pulled beef is super tender and smoky, the red salsa on top is great, and we could eat a dozen of these with a boozy slushie to wash it down. To activate the barbacoa taco expansion pack, add some of your hoarded smashed avocado. Mole De Xico Tacos If you like mole, you will be disappointed with these. Not because the mole is bad, but because you only get a little dollop underneath some basic chicken tinga. Roasted Chicken This is a roasted half-chicken that comes with pickled cabbage, some kind of green mayo, and tortillas to make your own tacos (which end up being kind of unnecessary). The chicken itself is fantastic, but the sauce on top tastes like someone tripped and knocked over an entire container of cumin into it. Can’t rave enough about this place. First off the salsa they bring out with the chips and salsa is AMAZING!! I was craving some authentic street tacos… So we got the street tacos and the shrimp/fish tacos 🌮 Our favorite was definitely the beef - but they were both delicious. The server, who I think was the owner….told us all about how they cooked meat, what part of the cow they used and how it was as the authentic way his family did it. My husband got the Pineapple Habanero Mezcal drink….and it had a kick…but was freaking delicious. I am already craving this place, the minute we left…see you soon!!

The food was good! They do have pasta on the menu if you don't like Mexican food. They don't give the amount of rice and beans as a traditional Mexican restaurant, but still good. The waiter was nice. It was kind of pricy compared to other Mexican places.

Terrific dinner last night. Great skinny margaritas and Mixed Plate. Fast service, good tequila. We are on the patio. My only complaint is the salsa with chips- it needs a little more kick! We will be back! 😊

Not sure why it's billed as a progressive Mexican restaurant but the food was excellent. Had the burrito with chorizo. It was huge. It didn't come with any sides but that was ok as there were plenty of chips and salad to go around. The service was a little slow. We went at 5pm on a Saturday but there were only a few tables with people. It took a few minutes for the waiter to even come say hi and bring the check. However, I do appreciate that they didn't try to rush my large party of 8 out the door after the meal.

My first time visiting, the restaurant was busy and vibrant, and although there were many people having conversations all around us, it didn't ever sound like we were in a crowded, noisy restaurant. Somehow, it managed to be well-lit, yet cozy. Warm lighting and intimate seating. No glaring industrial lights here! Our server was an absolute delight, she was extremely cordial and friendly, it was like chatting with one of my goddaughters while she was helping me explore vegetarian options. I had my first ever arepas, and they won't be my last. Just completely delicious and flavorful. You can tell the food is made with great care and attention to the quality of the ingredients. Beautiful and delicious. Prices seemed very reasonable to me, especially for the quality of the food (excellent) and portions had options on many items so you can just order what you're able to eat, or choose a couple of options by ordering one each of a few items. (Fantastic if you are a person who has a hard time choosing between favorites!) I'm so glad to see something occupying that space, and I plan to return and recommend to friends and family. Positively stunning experience.

Food 5* we both enjoyed our fresh chips and salsa with our meal. I ordered the birria tacos and they did not disappoint. I do prefer my consomé a little thinner, however it had great flavor! Nice crispy shells served with onion and crema. Margaritas were happy hour priced since it was Sunday. Added bonus! Service 5* Our waitress gave great suggestions, friendly, and attentive. Restaurant was not busy when we arrived but filled up quickly for the dinner rush. Atmosphere 5* Lots of beautiful decor to look at. Clean tables and booth. Did not visit the restroom on this visit. This was our first time visiting Copal and it won’t be our last!

A gem in Lincoln. Apart from typical Mexican cuisine, you will also find some regional flavors that bring some serious authenticity to the establishment. When you visit, I urge that you try something new as a plate for the table - the flavors are supreme and the service is excellent. They also have a rotating special menu with extra items, mostly regional flavors. Kudos to the chef and the staff. Never had a bad experience here, and I usually get to try something new.

First time checking this place out - was super good! They are plenty of gluten-free options (corn shells in place of wheat). I had chicken quesadillas and some kind of a birria tacos. The additional sauces were really good. You get chips and sauce as an appetizer automatically. Service was really great, options for indoor and outdoor seating, alcoholic drinks if you choose, and the place was nice and clean. It's a little weird to find the door to get in, but pretty good parking. My friend and I averaged $43 for each of our meals plus a split appetizer, but we were also starved and got more food than a sane person.

Tried this place for the first time. The food was good. We had the sopes and the huarache. Not things you can find at a lot of Mexican restaurants. We asked for them with no meat. Both were tasty. We also had the churros for dessert and the were very tasty. Only drawback was what appeared to be a new person who was not familiar with the menu and hard time answering questions. Even so, we will be coming back here.

I am looking for a Mexican restaurant at which I must wait an hour for a table. I haven't found one in Lincoln. This one is the best I've run across here even though it is not rated on Yelp as one of the very best. The ambiance is pleasant, slightly upscale pleasant. Our dinners were excellent. Kathy had a creamed chicken that she described as excellent. I had a sampler that included a chorizo patty, carne asada and a chili relleno. It was presented with a brush of elegance with the sides spooned into a three-divide serving dish. The flavor of everything was excellent. Of particular note is that the chorizo was outstanding, with a powerful, flavorful sauce, so powerful that I could not finish it. It wasn't hot, just intense. Damn, it was good. My only complaint is that the asada was tough, very tough; and thin, very thin. Otherwise I would probably have given Copal five stars. Onward in search of the one-hour wait...and return here.

Great Mexican food. Definitely more culinary with twist style. Started off the chicken nachos with the chicken tinga nachos. They had a good amount of chicken and toppings! Next I had the birria tacos with the consome, delicious and nice and heavy on the beef. My friend had the shrimp and fish tacos, which she said were delicious. We started using Copal during Covid in 2020 and continue to use them on a regular basis. We really feel it is tops when you consider the three main things that make a restaurant unforgettable. The service, ambiance and food are second to none. So we highly recommend this place and will continue to go back over and over again.

Came here for dinner with some friends my fiance and brother after suddenly changing plans to get Mexican instead of classic American. The chips and Salsa they brought at the beginning was so fresh! I really love that Salsa and it was hard to stop myself from reaching for that bowl over an over. I ordered the Fish and Shrimp tacos, but with only the grilled Mahi Mahi. I loved the fish by itself and that pineapple mango pico de gallo on top was really good too. I wasn't too big a fan of the whole taco as a whole though. The tortilla probably put things off for me. I also opted for some vegetables and mix of guacamole and some extra salsas on the side instead of the rice and beans that came with. I tried the beans from my fiance's bowl and they were actually really good. Fiancé got the Pastor tacos and those were freaking amazing! Perfectly cooked meat and everything went amazing together. Tortillas were definitely great there. My brother got the Mole Enchiladas and really loved them. That depth of flavor actually came through. Not pretty to look at but very good to eat! The rest of the table got some fajitas and carne asada and everyone enjoyed their food. There was also some Passionfruit Margarita and Strawberry Margarita ordered. I tried the strawberry and the flavor was really good as well. Not too strong and I could have totally sipped on it all myself. Cut off a point because I felt sick after going home and actually threw up too.

Absolutely wonderful experience!! When we arrived it was obvious that the service staff was ready to go! Edsen was our server and he explained everything so well and made the best recommendation EVER! The other wait staff didn't hesitate to assist where needed. It was obvious that this was a family owned establishment and they take a lot of pride in both the food and the service!!! Great great job! We will be back!!

There isn't anything that missed during our visit here. The service was incredible, our drinks were refreshing and perfectly mixed. The food was spectacular. The shining star was absolutely the chile relleno, however, the other dishes we had were equally as delicious. Lastly, the decor and vibes in this restaurant were great. This will be our new go-to Mexican spot, in Lincoln!

Not even one star. First, they were not busy, but it took forever to get waited on . I tried to ask the wait staff and owner, I presume, about items on the menu, but the wait staff did not know and the older man was hard to communicate with. My mom and I had been waiting for awhile to order and we were hungry so we went ahead and ordered. The meals were the worst we have ever had. The tamales were like breaded corn dogs. The carnita was greasy, unflavorful chunks of fatty pork. I told the man who I presumed was the owner and he just mumbled, shrugged and offered to give me something off my next meal. I told him we didn't like the food and would not be coming back. He still did not offer anything back to me or my 92 year old mom for the terrible food. I usually would not take the time to write a bad review, but if I can spare anyone else from our experience it is worth my time.

We live close to Copal so we've been in quite a bit. It is hands down my favorite Mexican restaurant on the South side of town. Whether it's to grab a to go order, a quick lunch, date night, or book club... Copal has never disappointed me The Birria tacos are my usual order, but I've also had the Al pastor tacos and they were great as well. The chips and salsa are also tasty.

Visited Copal with a party of five on a Sunday afternoon. We made reservations but probably didn't need to. We were seated in a cozy corner booth. Server took our drink order which was a pitcher of margaritas. Menu was right sized and didn't have too many unnecessary options. I ordered chicken fajitas. Service was slow, but it wasn't the servers fault. Like most restaurants, they didn't have enough servers. (You all need to pay your servers more.) This is where I insert my only negative comment. We ordered Guacamole and it was absolutely tasteless. It was weird how tasteless it was. Our dinners were brought to the table hot and fresh. And mine was delicious!! Absolutely fabulous. It came with beans and rice in a lovely presentation. The prices were quite reasonable. On par with other Mexican restaurants. But, the food was best in town. I encourage the owners to get more staff. Give the chef whatever he wants to keep him. BUT, you have got to do something with the Guacamole and Salsa. Both need more flavor. Much more. I look forward to coming back and trying new menu items. I recommend this restaurant for everyone.

Don't read those 4 star or less reviews....great food and great service! I ordered the steak tacos, and my husband had the fish + shrimp tacos. Both were delicious and not greasy!! The margaritas were also really good. Our waitress was very sweet, and very attentive. We don't live anywhere near Lincoln Nebraska, but if we ever come back, we'll be sure to visit this restaurant again!

A really satisfying meal for everyone in our family. That includes our little kids and my parents, one of whom isn't crazy about Mexican food. We did carry out due to the Pandemic, and thought everything tasted just about as good as could have been expected. Each dish had a little extra something added to their standard Mexican fare. As an example, their salsa was delightfully complex - savory and smokey, with a touch of sweetness. Also, they sent us home with a generous serving of salsa and chips for each entree, so we enjoyed Copal for several days afterwards! Copal was a little optimistic on how quickly their food would be ready. Their email said 20 minutes, but it was a little more than 30. But this did not detract from a great dining experience. Strongly recommend!

Unique Mexican offerings. Can't recommend this restaurant highly enough. Perhaps the most "progressive" Mexican restaurant in Lincoln. The drinks are great also. I have never had duck in a Mexican restaurant before, but it is treated very creatively. Great place for a date night.

If you're looking for a nicer style Mexican meal that still has some traditional roots, this is a great spot for you. They've got lots of parking in the lot, and a menu that covers a lot more than local texmex counterparts. We did a pick up order thru the yelp app using grubhub. It was easy to use and the order pushed through very quickly (I called after placing it just to check). Our order was a mix of tacos and enchiladas. I could tell the food was homemade, and I particularly liked the Mole on the enchiladas. Overall, they did everything well. I would say, this restaurant is probably just not my style. I love the hole in the wall salt-acid-fat of street mexican, something like what you might find at El Ray. I do recommend Copal though, and they are a good addition to the neighborhood.

Went for the first time tonight after wanting to for quite some time. I had las Verdes carnita enchiladas, the wife had mole enchiladas, the kid a burrito off of the kids menu, and we had a queso dip appetizer. Everything was very good with the exception of the queso, which had broken and was very runny, and nearly impossible to dip...was more like a thin soup. Kid's burrito said it was bean and cheese but there was also rice in it. Kids rejected. Kids are picky, no big deal, but the menu (or kitchen) should be accurate. Service was friendly, competent, and not too much or two little. If I was her, however, I wouldn't have served that queso. I liked the atmosphere...casual, not loud...nice to able to have a conversation... seems like so many new restaurants feel like they have to crank music to manufacture "fun" for some reason. We were really looking forward to this, but it was so bad. To begin with, the menus were crumpled and stained with food (see photo). They brought chips and salsa (chips were cold), then took our drink and appetizers order. I mentioned I have a gluten allergy but the server wasn't sure what I meant. We order the cheese dip and two margaritas to start. In a few minutes, we received another basket of cold chips and a room temperature bowl of liquid cheese. When I pointed out that the menu says the cheese dip comes with jalapeños and chorizo, the server replied that "most people don't like chorizo" and offered to bring us a side of it. When it arrived, it wasn't fully cooked. We were too disappointed in the experience to order entrees as we'd planned.

My husband and I stopped here on a Sunday afternoon. We are from Ohio, taking a road trip that will eventually lead us to MT. we looked at restaurants in the proximity of our drive, found this restaurant, then based on previous reviews we stopped. our food was delicious! We each had tacos, i had fish and my husband had beef. we also tried a thick corn tortilla covered in slaw, shrimp and spicy guacamole that was fantastic. Don't remember the name, we ordered it based on recommendation of our waiter who was very knowledgeable. Food made from scratch with fresh ingredients. if we drive through Lincoln again we would definitely stop. Highly recommend!

Super disappointed. We had a group of six; when we arrived there were only two other tables occupied. The entire restaurant didn't even fill up to half capacity yet our drink orders were messed up, the first person served their meal was finished before the last person was served their meal. The food was extremely subpar and they charged us a 22%auto-gratuity After adding the tax. that was on top of not entering in any of our happy hour drinks until we went to leave there for not giving us the happy hour price. Will not be back.

I really want to give a five star, but my only complaint was the table we sat at was wiped down with a sour cleaning cloth. I wish restaurants would pay attention to this. It took a lot to get past that smell! I had to take a napkin and wipe the table with hand sanitizer. The service was good as was the food.

I wanted to like this place so bad! To start off with the good, we had great service while dining here and the Tres Leches came we had for dessert was amazing. When it came to our food we were disappointed. Starting at our chips and salsa, our chips were stale and our salsa was almost tasteless. I had steak fajitas and the meat was completely dried out and tough. My boyfriend has a burrito and it again lacked seasoning.

I recently had a fantastic takeout experience here. We ordered food for a small birthday and everything was delicious. The food traveled well and everything tasted fresh! I've heard such good things, but it was very satisfying to have myself.I highly recommend ordering the queso and being extra and getting the quac. I went with a traditional taco order, it was fantastic. Everyone dug in before I could get pics, but I highly recommend, especially if you're in the area, they're not many good mexican restaurants near by.

One of the best Mexican restaurants in Lincoln. We got the nachos and guacamole for take out. It was great. Wish there was a bit more queso on the chips. The quac tasted great, and was a nice sized portion. Nothing was too spicy even though there were jalapeños. We will go back and enjoy eating in the nice atmosphere, and have drinks.

One word: Amazing! This is our go to place for Mexican food in Lincoln. We ordered Arepas (carne asada, carnitas, and chorizo) and Huaraches with chicken tinga. My favorite was the carne asada and carnitas arepas. The guac salsa is a great compliment to the flavors. All are winners. The complimentary chips and salsa are very good. I like the chips are nice and crispy. There is little spice to the salsa, I wish it had a little more heat to it. We will be back to try more items!

Copal has inspired me to write my first yelp review. It has taken many visits, but each has been deserving of five stars. Tonight was the yet another delicious visit. Bringing an appetite for the simple-basic, I opted for the shrimp quesadillas and soup. The shrimp--juicy and wonderfully seasoned--was very generously packed in between cheesy tortilla triangles, a full meal unto itself. The soup, ah, no ordinary bowl of chicken soup. It was Caldo de pollo, a Mexican staple--an infinitely flavorful blend of shredded chicken chunks, fresh avocado slices, rice and spices. It comes with additional sides to add in at your pleasure, freshly chopped onion and cilantro, and a silky chile sauce to add additional spice to your experience. It comes in three sizes--cup, bowl, and XL. The bowl will fill you up like a full entree (our waiter said you can swim in the XL). My wife had her usual favorite--enchiladas mole, a very distinctly Mexican dish and unique flavor. She has Mexican heritage and has had much mole, and she raves about Copal's concoction. Another plus: As a cocktail was included with all the food, and both of us feeling completely stuffed, I was expecting three figures on the bill, and was very pleasantly surprised to see the final total under 50. We have resided 21 years in Lincoln and are quite familiar with much of the Mexican faire the city has to offer. Copal is by far the best. I have had different dishes each night and all delicious. Have the carne asada--juicy and tender skirt steak. Incredible. Fresh, authentic creations--apart from the standard Americanized iterations. You will not be disappointed.

We checked out this place a few weeks ago and while it wasn't bad, nothing really amazed us. We came in for a late lunch on a weekend and there was only one other table, so we were able to get a table and were greeted by our server right away. There seemed to be a little confusion about the whole gluten allergy, our server had to keep going back and checking with the kitchen, but eventually I figured out what I could have. We got a little tiny plate of chips and salsa, which the salsa was very good but just a very small portion. Everything you order is a la carte, so again, portions felt a bit smaller than we were used to. I had the special which were duck tamales and they were pretty good. I also got a side of black beans. My guy had the enchiladas rojas and said they were okay. Price is pretty reasonable so if you didn't get enough food with their smaller portions and no sides you could order a couple of different things and treat it tapas style. Service was overall pretty average. It's worth checking out if you're in the area, it's just not one of my fav digs in Lincoln.

The food was delicious. However, if you dine here I would suggest planning your meal so that you are not there within an hour of closing time. My friend and I arrived at 6:30ish on a Sunday. We were enjoying a lovely meal and having a great conversation and tried to order a second drink at 7:45. After initially being told that we could not order anything else, the server consulted with a colleague and then brought us our drinks. Then, at 8:30 a different server took our water glasses and started to clear the rest of the table (we had paid but were finishing our drinks). She informed us that the restaurant closed at 8:00 and asked us to leave. After a short back and forth-- we were very confused-- we left. A disappointing and strange end to a lovely meal.

We were there on Saturday night. I wish I remembered our waiter's name, because he was FANTASTIC!!! The service was over-the-top good, & the food was amazing!! I had the steak tacos, hubby had fajitas, other members of our party had the fish & shrimp tacos & a combination plate. Everyone raved about their food. The chips & salsa were delicious, & the rice, beans, & salsa verde that came with my meal was also very good. We don't get to Lincoln very often, but we will definitely remember this place & eat here again when we do!!

I have been to Copal in Omaha many times and have always enjoyed it. I visited the Lincoln location with friends last night. I raved about the drunken carnitas that the Omaha location has on the menu but the Lincoln location does not have. The waitress said they could replicate that dish, no problem at all. So one of my friends said that sounded so good so she ordered the same thing. It came out 60% fat and inedible. My friend disliked it too. We told the waitress our concern and she adamantly said "it's not fat, its potatoes." The group of friends tried it and agreed that it was indeed fat. The waitress came back and asked if everything was alright. I said "everything is ok but its fat, not potatoes and I don't like being lied to." She said "it's potatoes oh my god". I was so disappointed by her reaction. She never apologized. But her manager did take the meal off the bill, but made my friend pay full price for her fat. So disappointing. I will never go back to either location.

This is a little bit of classy Mexico right in Lincoln! We love the food and we come here regularly. They are not like other Mexican restaurants... This is very high quality classy food with outstanding service. I would recommend it to anyone.

Hands down one of the best Mexican food experiences in the Lincoln area. Feels like grandma is back in the kitchen preparing all these delicious, homemade, authentic meals.
