I've been to Costiera for dinner twice and, while I love the vibes, the space, and the service, I've been underwhelmed by the food both times.
On my recent visit, I shared four dishes with my friend: their hamachi crudo (with blood orange vinaigrette, creme fraiche, pickled shallot, and dill); their fennel and celery Caesar (with romaine, radicchio, anchovy dressing, Grana Padano, and focaccia crumbs); the grilled Spanish rock octopus (with local black turtle bean hummus, baby red tomatoes, and harissa yogurt); and rabbit confit cappelletti (with spinach pasta, hedgehog mushrooms, and taleggio fonduta). Of these dishes I did really enjoy the crudo and thought the pasta was almost great. I think all the dishes were underseasoned. The Caesar was my least favorite, because it was just lacking in flavor - not enough anchovy flavor - lacking in umami and salt. It tasted like lettuce dressed in something white that just had very little flavor. I thought the octopus's char had been pushed too far, giving it a burnt taste, that I didn't enjoy, but I thought the texture of the octopus was just right, and that's usually harder. I also found the accompaniments strange on that dish (really thick bean hummus and too little of the sauce). The crudo is a pleasure to eat - a really fun dish. And the pasta was good even if I found the mushrooms stems a little woody and fibrous and the dish a little underseasond, too.
Their beverage list is great, and my friend and I shared a bottle of wine we really enjoyed. The space is great (with big loft/industrial-looking windows and lots of plants. The service was also great. Unfortunately, the food just doesn't wow me compared to other restaurants in Baltimore.
