El Invernadero

"Rodrigo de la Calle defines himself as a culinary ambassador for the plant kingdom, a valid claim given the efforts he has made to champion our natural surroundings and his role as one of the pioneers of "green haute cuisine".In his restaurant, with its open-view kitchen occupying a contemporary, nature-inspired dining space, discover his culinary philosophy in which vegetables are at the essence of his cuisine. His delicious, elegantly prepared dishes showcase plenty of technique and can be savoured on a choice of tasting menus: Green (including vegan and vegetarian options), Red (featuring a few meat dishes), Blue (predominantly fish) and Vegetalia (his latest creations). These can be paired with classic wines or a unique array of fermented beverages (kombuchas, tepaches, fermented vegetable drinks, licuados etc)." - Michelin Inspector

What an incredible meal! I had the vegan option for the dinner course meal on our vacation to Madrid last month, and the Michelin stars are well earned here. The plating was creative, the cuisine was delectable (several dishes made me quite emotional tbh!), and the staff were very helpful, friendly, and accommodating as Spanish is not our first language (we try!) The house-made wines were a bit sweet for our tastes, but every other wine was had with the meal was incredible! I would come back again and again. What a great experience!

An unforgettable fine dining vegan experience (This is world-class vegan dining, and having it in Madrid feels like a true gift) From start to finish, everything was exceptional — the service was warm and attentive, and the food was both creative and absolutely delicious. Each dish surprised and delighted us, and we left feeling super full, happy, and thoroughly impressed. We’ll definitely be back whenever we want to celebrate with an extraordinary vegan meal.

This Michelin One Star restaurant is innovative, especially with vegetarian dishes, and the presentation is beautiful. You can see the creativity and cleverness in the menu. However, while the dishes look artistic, they don’t deliver a real “wow factor” in taste. It’s interesting to try once, maybe for food critics or those focused on vegetarian cuisine, but it’s not a place I would return to or strongly recommend for most diners.

This is a creative fusion restaurant awarded both a Michelin Star and a Michelin Green Star. The menu is seasonal and plant-focused, offering both fully vegetarian options and selections that incorporate animal proteins. The interior features warm wood tones and lush greenery, with seating divided between a chef’s bar and a general dining area. The staff is friendly and attentive, providing detailed explanations of each course in both English and Spanish. I chose the “Gastrobotánica Experience” tasting menu, which included around 20 small courses—ranging from appetizers and mains to desserts. Every dish was thoughtfully composed and packed with flavor. The opening plates had a refreshing vinegar-based profile, while the standout main featured fish paired with grilled avocado. Another highlight was a black garlic risotto with pork cheeks—an aromatic, layered dish that left a lasting impression. I also opted for the wine pairing, which featured 7 distinct drinks. My top 3 were the hibiscus sparkling wine, floral cava, and apple sake, all of which were unique and perfectly matched to the food. This is a fantastic destination for those who appreciate botanical-forward cuisine, inventive fusion, or thoughtful wine pairings. Whether you're vegetarian or simply curious, there's something for you. The menu is offered in 2 versions: vegetarian (158 EUR) or with animal protein (168 EUR), with the optional wine pairing priced at 60 EUR. Since seating is limited and the courses follow a timed service, reservations and punctual arrival are essential. Btw before leaving, the restaurant also gave all the guests some small Goodbye Gifts which it was a sweet detail.

El Invernadero was one of the best dining experiences of my entire trip! The tasting menu was thoughtful and creative, the ambiance was warm and inviting, and the staff were absolutely incredible—funny, knowledgeable, and attentive. I loved that they explained each course in detail and made me feel welcomed as a solo diner. The gift at the end (a beautiful clay cup and tote bag) was such a classy touch and made the evening feel special. I honestly loved almost every single dish—there were about 20–21 tastings total! If I had to choose: the mushroom-forward courses, the fresh herb consommé, and the creative takes on traditional Spanish flavors really stood out. The only dish I didn’t fully enjoy was one with a strong “taste of the sea” — I think it had nori or seaweed in it — but even that was executed beautifully.

El Invernadero offered one of the best dining experience I’ve had to date. The service was exceptional, with the staff enthusiastically explaining each dish and ensuring we had an unforgettable evening. One of the highlights was sitting at the chef’s table, where we could watch each dish come to life. The house wines were exceptional, especially the unique beetroot pairing. Each course was a delightful, orchestrated discovery. There was nothing I could think of to improve – every detail felt perfectly curated. Highly recommended for anyone seeking a memorable and refined culinary journey.

Want a great place that's romantic with amazing food and wine pairings? Look no further as this is the spot for you. The food was simply amazing. Excellent customer service. The server explained every single course item along with the proper wine pairing included. The chef made an amazing presentation of each course delicacy. So quiet and romantic. I loved sharing this wonderful experience with my fiancee and soulmate. Can't wait to come here again in the future with her for a surprise anniversary in the future. Thanks for amazing food, delightful wine and fond memories. Definitely a must for anyone who is a true foodie or enjoys grand food experiences.

We really loved their focus on vegetables - that’s so rare in Spanish fine dining, some dishes were really good (beetroot, onion, radish…), some good. Overall the food was super tasty, there was a lot of umami, great play with fermentation and acidity. The desserts were underwhelming though. We loved the pairing with kombucha and water kefir as well. Much more interesting than standard wines. The service was not top notch, not always coordinated and sometimes missing ab explanation to a dish but really friendly and nice. The ambiance was casual and nice but the air conditioning is not working well and there were moments with intense kitchen smoke in the serving room. And to finish, here‘s the HUGE but: We asked multiple times for getting at least a moment to finish our small plates before the next courses (sometimes the next 2-3 little courses) were served. It wasn’t possible to eat at a normal speed, there was clearly time pressure with the second shift of reservations coming in later, and it was said openly. A normal seating time in Michelin restaurants for dinner service tasting menus is 3-4 hours, we were ready for a shorter experience but we were served all courses within less than 80 minutes, then the bill was brought to the table without asking. We left the restaurant after approx 90 minutes with a bill of 500€. However good the food is, the overall experience was not worth coming back. We want to leave relaxed, fulfilled and joyful when going out for dinner, not hurried up.
