In a town known for seafood and tourism, it's difficult for a taqueria to stand out.
El Paisa is a delectable change of pace from the fish tacos and ceviche tostadas you'll likely see advertised at every corner.
What is special about this place?
1) The food is ridiculously good. How good? Enough to have 50+ people crowd around late on a Sunday night. Enough for me to say that if there was one and only one meal I could eat the rest of my life - this would be it. This meal experience is worth the whole trip alone. Forget the tourist traps this is as legitimate as it gets.
Carne asada tacos is what they do best. What is in that tortilla? Don't know, but even cold it tastes good! Soft, fluffy, melts in your mouth with the meat. And the meat!!! Oh boy.... that is something else. I can't tell if it's a marinade or just the mesquite coals, but the smokiness, juiciness, tenderness.... it's the sort of stuff you can't stop eating even when your stomach has told you long ago to stop.
This was the best stop of our short trip filled with lovely, friendly people and phenomenal food.
Thank you Mexico, and thank you El Paisa! Please don't ever change what you're doing.
