For Chefs, Booming Home Businesses In New York and California

"Christina Hanks and Jacob Fraijo honed their pastry skills at Dominique Crenn's Crenn Group (Three Star Atelier Crenn, One Star Bar Crenn). When restaurants across California began closing last spring, the pair moved back to LA and, just before Thanksgiving, cooked up Pavé Bakery. Fraijo generally does breads and Hanks pastries. Nearly every closet in their house is full of packaging, and the dining room is now a kitchen extension—wooden work tables, a Metro rack, and two tabletop mixers. They do all their baking in a small convection oven—dark, rich chocolate rye sablés, crackling loaves of oat porridge bread, a bright, springy Fraisier cake (their favorite), and a simply scrumptious customer-fave kouign-amann. The duo hopes to expand their toothsome home treat business to a brick and mortar space soon. Follow @pavebakery for updates." - Sophie Friedman

Instagram Pop-Up Bakeries Are an Exciting Product of the Pandemic | Eater

"A bakery launched by two pastry professionals who returned to Los Angeles after work in San Francisco; the shop pairs one baker’s breads with the other’s pastries, both shaped by French technique and California sensibilities. Early standouts like an apple kouign-amann and sesame country bread quickly caught the attention of other pastry chefs and helped the bakery build a network through mutual admiration and product exchanges." - Meghan McCarron

I recently stopped by this authentic Mexican bakery and was impressed by their pan dulce selection. The elote was perfectly sweet with a soft, crumbly texture. So much better than the ones you find at a grocery store. I also tried the pan de Guatemala, which was rich, slightly dense, and perfectly baked. Both pastries tasted fresh and authentic. I'll definitely be coming back for more!

This is a rather small Latin bakery with Hispanic sweets. I was on my way to work, and it was New Year's Day. My options were limited as to what was open. The sweet items available were an abundance. I grab some cheese tamales for lunch and some sweet bread for my coworkers. The tamales were a very n8ce surprise. The masa was light and fluffy and was flavorful. They were a larger portion than what I initially expected. Full of cheese and green chili. The sweet bread was a hit at work. Everything was gone by the time I left work. We need to support these small businesses in our neighborhoods. If you are in the area, stop by and enjoy something sweet and a little something savory while you're there.

Friendly staff. Clean. It's a small bakery so there's not a huge selection of bread, however, the sweet bread they do have, is delicious. It's affordable. You can pay with cash or debit. They also sell tortas which are pretty good too. I've tasted their bolillo and honestly, it's not bad but not great either. Sometimes it's stale. What people buy the most is sweet bread. They also sell cakes, juice, soda, eggs, milk, hot chocolate, and tea.

Yelp
I haven't been here in about 33 years...when I walked in today I legit got emotional because it brought back childhood memories of my late dad. I remember when their bolillos were only $0.25 each...those were the days! They still have the same Mexican breads like conchas, puerquitos, payasitos etc...but it's a lot more run-down and it didn't really smell like fresh-baked bread anymore sadly :-( . As far as parking - street metered parking. It can be a little tricky to find parking though as street vendors do take up some spots.

Yelp
Honestly I Love The bread no dout about it. but the customer service makes me not want it to come anymore. The Lady in the Morning is always mad she not even says hello o thank you and i strongly believe the customer service is always veen tge key to succes.. i have met The owner sons a while ago when we bought one of their stores is just a pity having emplyes that not even have a little education

Yelp
I honestly didn't want to leave a review because I'd like to keep this place a secret. The conchas and ESPECIALLY the croissants are so fresh and delicious! They have a few locations. The one near County Hospital went above what was expected. I ordered pan dulces for a party I was throwing at my church the day before the party. I went the next day to pick it up and they mistakenly placed my order ticket in the Saturday pile instead of on the Friday pick up pile. Because of that error they offered to make a fresh set of breads and deliver them directly to my event and they came exactly as expected. This is truly the best pan Dulce spots in LA hands down!

Yelp
One of the best bakeries in East LA. Because all the things they sell are made very good. Their bread, pastries, and coffee are very delicious. I love having their pan dulce for breakfast. The workers were very nice and helpful. Highly recommend swinging by to pick up bread in the morning.

Yelp
Breads alright I like both bakeries but tend to go to the other one right down the street , I was getting bread and my hand spasms so I ended up dropping my croissant and the pick up stick and said sorry and the lady there seemed pissed already when I was paying for the bread she gave me so much attitude and said the bread was 1.50 extra but she wasn't gonna charge me for dropping it like damn I get you're mad and I apologized but don't have to be such a b about it I'm not coming back here again.

Yelp
Yesterday I wrote a poor review for this company because it's been twice already that I walk out empty-handed because they don't have change to break a 20. I still gave it two stars because well, it's El Pavo and their bread is delicious. Today I had enough loose change to endeavor to walk in there and expect to walk out with their latest product, one of my favorite winter treats-- champurrado. I was reminded, again, why I have a negative image of this iconic bakery now that I've tried out their Cesar Chavez location. I asked for a medium champurrado. The cashier, Francia, served it and went to the back to heat it up in the microwave. When she came back, I realized it was a bit too much, so I asked her if I can have the small one instead. Yes, it's one of those annoying customer stories that end up in Buzzfeed by disgruntled food industry employees, but it happens. Most employees would've saved the frustration for their social media accounts, but Francia told me outright, "No, ya te servi el mediano, ni modo, ahora te lo llevas." ("No. I already served the medium one, you have to take it."). I didn't take it. I went to Walgreens instead and got myself a delicious French vanilla capuccino. The reason I know her name is because she had been rude in the past and investigated her name to report her. However, I never did because I figured she was just having a bad day, and her job sucks and I felt sorry for her. But this is too much.

Yelp
The bread is waste, the customer service is really rude. Please people don't buy stuff from this bakery, that bread is look like they have made a month ago, and it's sour. I don't recommend this place. Never come again.

Yelp
To be honest I love some of the bread in these bakeries but unfortunately I about to call consumer and business affairs because I'm tired for no knowing exactly the price for each product these bakeries sell . There is no prices out from for anything specially not on the shelves. The clerks just do the adding rising sometimes the price for the bread without telling before I found out todays morning 3.00 extra on my receipt I checked before she did the transacción on my card and notice it was more than regularly pay for my 10 or 13 pieces. I'm being buying for mor that I can imagine of years I'm living in this area for more than 27 years furthermore the economy is hard for many of us and this bakery on Soto and Cesar Chavez NEVEr has had a nice "gesture"or "special" for our Latino Community I'm very very disappointed .

Yelp
I must say it actually is breaking my heart to have to write a negative review on Pavo Bakery. My parents have been buying pan Dulce from here for many, many, many years. We have never had bad bread from here up until yesterday. I was on my way to work so I stopped to buy some pan Dulce for my work. The bread was hard and and lacked flavor. This bread was not fresh I was so disappointed and embarrassed.
