"This lovely mill built of local stone and flagstone stands in a bucolic setting on the banks of a river. The restaurant has exposed rafters and large picture windows. Having worked in the restaurants of Pierre Gagnaire, Michel Bras and Alain Ducasse, Émilie and Thomas Roussey, both chefs, have swapped their premises with those of Hervé Busset, who is now based in the heart of Rodez. Not that the rooms are an afterthought — they’re surprisingly contemporary in style, in contrast with their historic architecture, and they’re full of comforts as well, including private terraces with river views. We went there in May 2025 for a lunch with friends. The location is great, you eat board of a mountain river and the view is breathtaking . The food is good and you understand why they got 1 star. Taste combination is interesting and allows you to travel via food over entire county. The lunch was very nice and the only two improvement points I will suggest service level ( to align service with expectations from 1 star) are: 1. The waiter was a little too confident on his approach and his interaction with us was too familiar. 2. We eat outside to enjoy view. No parasol proposal from waiter.

We loved staying at dining at Moulin de Cambelong for two days prior to walking the Camino. It was a luxury that we will remember for a long time. The staff were lovely and able to swap to English for our absent French language. The welcome and warmth shown by the staff. The room was comfortable with a balcony overlooking the Dourdou river. The meals at Bistrot Heron and the Gastonomic restaurant were excellent and able to be adapted to our vegetarian needs. We were able to purchase a picnic for our first days walk.

Was at Moulin de Cambelong in June with a group for 3 nights. I must give 5 stars to them for everything: the magical location (a restored medieval mill), the interesting design of rooms (a very French combination of new and old), the dedicated service and, last but not least, the amazing gastronomical experience of Emilie and Thomas. Every dish was a work of Art and Love, which they call "instinctive cuisine". Definitely worth it, both for the dinner and the overnight-stay. We all felt at home here, and, most of all, we felt welcomed!

OMG what to say Forget the city, but if you are staying one evening or just for lunch….come and visit Emilie and Thomas Roussey A really nice experience and some of the courses were just the level of one Michelin 🌟 Especially this revisited babaganouch. Simply the best we ever had. The spices were incredible of perfection. The crunch from the dehydrated aubergine…and the sumptuous local ewe milk curds (the second separation of milk after making the first cheese) Also this butter with vadouvan ….. incredible And what about this tomato pre dessert that totally confirm to you that tomatoes are fruits…and the lemon foam and ginger ice cream and caramel shard with tarragon…. unbelievable We hope seriously that Michelin critics will give them one star…. they totally deserve it. Shame that the city isn't that inviting but we believe this initiative from young generation chef will help the mayor to uplift the overall neighborhood.

Bien accueilli, nous avions réservé une chambre (une nuit), très confortable avec vu sur la rivière avec un petit balcon. Très bien de s'endormir avec le bruit et la fraîcheur de la rivière (il faisait 40° le jour de notre arrivée). Un petit tour à la piscine puis restaurant gastronomique. Nous avons découvert des associations surprenantes (peut être risqué pour certaines papilles mais nous aimons l'originalité). Une belle expérience même si le rythme a un peu ralenti sur la fin. L'accord était très bien également. A refaire mais en restant plus longtemps.
