"Just outside the medieval village of Conques, on the banks of the Dourdou river, chef Hervé Busset (and his wife Dominique, acting as manager), have transformed an old mill into a hotel and restaurant — or, perhaps more accurately, a restaurant and hotel. Not that the rooms are an afterthought — they’re surprisingly contemporary in style, in contrast with their historic architecture, and they’re full of comforts as well, including private terraces with river views.
