Etch - Review - Franklin - Nashville - The Infatuation

"Etch, aNashvillefine dining staple, made its way south to Franklin and carved out a spot in the industrial-cool maze of The Factory. It brought all of its greatest hits with it, too—the roasted cauliflower, the intricate sauces, the chef’s bar looking into the open kitchen. In fact, we’ve found that the Franklin location is just plain better than Nashville’s when it comes to the quality of food coming out of the kitchen. That bodes well for a high-reward date night or a parents-in-town dinner made up of a delightfully flaky confit duck tart, pan-seared scallops in Thai lemongrass curry, and a crispy potato salad tossed with mustard dressing and chimichurri sauces. There’s a little something for everyone on the menu at Etch, making it a solid catch-all special occasion joint." - Jackie Gutierrez-Jones

Nashville’s Most Anticipated Restaurant Openings, Spring 2024 | Eater Nashville

"Deb Paquette is bringing her long-time, globally inspired restaurant to Franklin with a new outpost at the Factory staffed by chef de cuisine Jess Lambert, executive pastry chef Megan Williams, and manager Dino Cocco to execute the downtown restaurant’s seasonal menu and warm-hospitality approach; two menu staples making the move are the roasted cauliflower and the octopus and shrimp bruschetta, and the new location is tentatively slated to open in May." - Jackie Gutierrez-Jones

I wasn't going to review this restaurant because I've reviewed the Nashville one a long time ago (for dinner) but then I decided to. First time here. It was not crowded at noon vs the other restaurants in the factory and I cannot figure out why. We came just after noon for Sunday brunch). Our meal was phenomenal. We ordered all 3 of the appetizers (the mushrooms...just get them). I had the Mediterranean salad with the wild caught salmon (and thank you for specifying that!). I think it might actually be the best salmon I've ever had. The champagne vinaigrette was amazing. I got it on the side so I could control how much went on. It was SO good! Best catfish our friend had ever had (he grew up with his grandfather owning a catfish farm). I mean, everything was just amazing. Highly recommend. And do not miss the coffee cake for dessert!

One of the finest dining experiences I’ve had in Franklin! From the moment I walked into etch, I felt welcomed by the warm, modern atmosphere and the professional yet friendly staff. The food was a masterpiece—each dish felt like it was plated with passion. The Wasabi Salmon was beautifully balanced with just the right kick. The Smoked Carpaccio melted in the mouth, and the Apple Sesame Tart surprised me with its complexity. For dessert, the Chocolate Mousse, Bread Pudding, and Pavlova were heavenly. Every course delivered a new highlight. Service was seamless—attentive without being overbearing, and very knowledgeable when it came to dietary needs. I really appreciated the clearly labeled vegetarian options and the flexibility for dietary restrictions. Parking is easy and convenient with free and valet options nearby, making it stress-free to plan your evening. Accessibility is well thought out and the space is wheelchair-friendly. Although it’s not themed for kids, it’s a calm and respectful space where older children would feel comfortable. This is more than just dinner—it’s a flavorful experience worth savoring. Highly recommend Etch for anyone looking for world-class food in a charming, approachable setting.

We tried Etch for our anniversary and the food was wonderful. We tried the duck pastry app; Hubby got the scallops, I got the wild caught salmon and fried Brussels sprouts. The service was great, the espresso martinis were strong, and they gave us a card and dessert. We had a very nice anniversary!

My partner and I love going to Etch!! The service is always pleasant and the food is an exceptional experience every time! For Valentine’s Day we planned to go to the Nashville location and were unfortunately included in an overbooking error. However, they were very accommodating and offered us a spot at the Franklin location. We had a great time! Fine dining is not something we can fit into our budget very often, and we are grateful that every time we visit either spot it is worth every penny!

I’m just a normal guy but I have eaten at a few nice restaurants around the Nashville area. This was hands down the best tasting food across the board that I have ever tasted. No joke… great service, nice atmosphere but the taste of every dish was out of this world!

I ordered filet , the steak was cooked to perfection as well as the mashed potatoes, but the sauce that game with the snake was not reduced all I tasted was wine. The vegetables were very hard, I had broccoli on my plate and my wife had carrots they could have been cooked longer. The dessert was very small and peaches were rubbery.

Chef Deb Paquette has once again hit another home run with ETCH at the Factory in Franklin. Love the decor and atmosphere! The menu offers some of the famous ETCH (downtown) classics in addition to a few new items and a Chefs choice. From innovative combinations to the sauces to perfection in searing and cooking Team Etch continues to set themselves a part from other restaurants. The scallops were delicious, the steak I could have cut with a fork! Kudos to the pastry chef with the Happy Birthday piece of chocolate … Nice touch! Congratulations Deb, Jess and the staff in opening another high quality restaurant!

Etch on Franklin in Nashville—what a meal! First off, let’s talk about the fried potato salad. Y’all fry the potatoes, smash them, then fry them again? That’s straight-up blasphemy… and I loved every bite. Crispy, creamy, ridiculous in the best way. I went with the mahi for my main, and it was spot-on and exactly what I wanted for dinner. The service? Hilarious. The staff had that perfect mix of being professional but also joking around just enough to make the experience feel fun and personal.
