I don't even know where Wolfforth is but I'm still going to talk about this company. Actually, after doing a little bit of homework, I learned that they are just outside of Lubbock. Having not visited the Lone Star State in over thirty years, I wanted to get a taste of the touted and famous Texas barbecue fare, especially after trying the highly acclaimed one in San Diego as provided by a local food consolidator. In studying their menu, I convinced my friend to share some of the food with me and promptly ordered a couple of things to try.
The two items were a pack of green chile cheese sausages and a full rack of the St. Louis pork ribs (sold frozen) which were well packed (https://www.yelp.com/user_local_photos?select=-Iwh2WWJyt8Ru3qEuXfz7g&userid=saJuyv784apZzH--psHZ3Q). For my first meal, my portion was one green chile cheese sausage and a quarter rack of the St. Louis pork ribs (https://www.yelp.com/user_local_photos?select=VsKM0zQeqnclqzka5r6YCw&userid=saJuyv784apZzH--psHZ3Q), using the cooking instructions provided by the consolidator on their website (pretty simple - 375F for 10 to 20 minutes on a pan or over a grill). The ribs were really tasty, seasoned deeply with a dry rub; my only issue is that I like my ribs wet and no BBQ sauce was provided - do you have or make your own?. Luckily, I had some left from the San Diego order and dipped these ribs in their sauce. How tender were these ribs? Well, the bone was clean, free of the tendon or ligament part that normally sticks to the bone. The sausage is deceivingly pretty large as I used a knife to slice it into pieces before eating. It is interesting to watch the cheese ooze onto the plate as I sliced it. The flavors are good and it has only a touch of spiciness so you may need to use hot sauce if you like it hot.
After this rib experience from two different geographical places, I must admit that Texas won my heart. I hope that they offer some form of sauce on their delivery or shipping business and would love to compare their side dishes with other places, local or delivered. Now I can say that I've tried Texas barbecue.
