Newly opened in Camp North End, Gravity Sourdough Pizza Co. brings a fresh, thoughtful approach to pizza making. The owner, Alex Osterhoudt, known for running Aurora Star Lit Cinema (the team behind the outdoor movie events at Camp North End), turned his backyard pizza hobby into a full-fledged business. When word got out about his pizza-making skills, he was invited to set up shop, and it’s clear this was the right move.
Alex’s passion shines through in every detail. Gravity Pizza’s 12-inch sourdough pies are crafted using a 200-year-old sourdough starter from King Arthur in England, giving the crust a rich, complex flavor. The dough is a mix of King Arthur Flour and 00 flour, creating a light, chewy texture that holds up beautifully. Each pizza is baked in an Italian-imported oven that reaches 825°F, cooking the pie to perfection in just about 10 minutes.
The menu offers both signature pizzas with well-balanced toppings and the option to build your own. They also offer vegan cheese, and beer, wine, and a kale salad are on the way. If you like trying different pizza flavors, keep an eye out for their soon-to-launch pizza flight, featuring three 8-inch pizzas with different toppings.
I ordered the “Tommy Boy,” which typically comes with cup pepperoni, but I swapped it for sausage. The pizza was topped with ricotta, mozzarella, red sauce, hot honey, caramelized red onion, fresh basil, and grated Parmesan. What really impressed me was the attention to detail. Every slice had the perfect ratio of toppings, with no sparse or overloaded spots. The sauce-to-cheese ratio was spot on, creating a balanced bite every time.
I prefer a lighter bake on my crust, and without any special requests, my pizza arrived exactly how I like it, with a beautiful, even undercarriage. The slices held up well, with just a slight, acceptable flop. For those who prefer a crispier crust, you can easily request that. One bonus I loved is you can get a free dipping sauce of your choice for your crust.
