Greenery Co. Opens Soon, Bringing Takeout Salads to Hillsboro Village | Eater Nashville

"I note that Greenery Co. is a new fast-casual, health-focused spot in Hillsboro Village rolling out a phased opening: takeout-only beginning December 8, with dine-in planned for January 4, 2021. Co-owned by sisters Caroline Gaston and Whitney Abblitt, the menu—developed by Austin-based chef Barclay Stratton—emphasizes locally sourced snacks, salads, warm bowls, sweet treats and a variety of nonalcoholic drinks; signature items include the Music City Med bowl (carrot falafel, quinoa, chickpeas, preserved lemon vinaigrette) and a Tennessee Thai salad with blackened shrimp, while guests can also build their own bowls from bases (quinoa, rice, spring mix) and proteins (seared steak, roasted or crispy chicken, carrot falafel) with an array of dressings and toppings. Seasonal offerings include carrot pimento cheese or French onion dip with crackers, roasted carrot soup with orange, yogurt and toasted almond, a soup with chili cauliflower florets, kid-friendly options, and triple chocolate chip cookies for dessert. During the takeout phase guests can pick up online orders curbside on 21st Avenue South or enter the front door to access the pick-up area; the parking lot behind the restaurant provides 14 spots (a rarity in Hillsboro Village), and starting December 8 the restaurant will offer free delivery to designated drop sites within Vanderbilt University Medical Center for area medical professionals. As employers, the sisters prioritize creating a supportive workplace with personal and professional development and guest speakers on topics like finance skills, customer service management and enhanced food safety education. I went to the Greenery Co for the first time for lunch on Monday, and it was such a great experience! The restaurant is so pretty and light inside — full of natural light, plants, and a really calm, refreshing vibe. It feels super clean and well-kept, which made the whole dining experience even better. Everyone there was so nice and welcoming, and I really appreciated how vegetarian-friendly the menu is with tons of fresh, flavorful options. Everything I tried was delicious! I’ll definitely be coming back soon.

WOWWWWW!! This place is incredible! The main dining area is where it’s at - almost wish the second half was like that bc we would totally work remotely in there pretty often if it was! - It was relatively empty when we went, but this place is a WHOLE NOTE - it should be packed!! Atmosphere - perfect!! Vibe - solid!! Food - phenomenal!!!! Their portions were just right! - got the Kale Cesar & subbed the almonds for their roasted chickpeas with medium level dressing. Everything was seasoned to perfection. - Also worth the upgrade to the local Walker Brothers Blueberry Jasmine kombucha. I was craving something healthy but wildly delicious and this was THE BOMB!!

I was a bit apprehensive about this place when we arrived because it was lunchtime on Sunday and it was relatively empty. We ordered our food after receiving some advice from our server and found a nice table in the main seating area. The bowls were amazing. I love the complexity of flavors blending together perfectly for a healthy hearty meal. On top of our meal one of the managers checked on us, helped clear our table and gave a complementary cookie to my wife for Mother’s Day. We will definitely be back.

This was one of the best salads I’ve had of recently! The blackened shrimp was a perfect protein addition. I really enjoyed selecting my own toppings, everything was fresh, staff were friendly and I didn’t have to wait 45 minutes to eat pancakes.

The freshest of ingredients and very imaginative choices for salads that I’ve ever seen. Friendly and prompt service in a bright and clean space. Reasonable prices and the most amazing chocolate chip cookie to round out our dinner. Love this place! Will definitely return when we’re back in town!

Decided to drive a couple hours to have lunch with a friend that works at the hospital. I wanted something healthy but not a chain, not the usual tacos, pizza, sandwiches type of restaurants either. I had the Thai salad. Salad could have used more than 4 shrimp. Only complaint I have. Everything was fresh. Restroom was clean. Plenty of tables open while I waited for my friend to show up. Will be back

Hands down one of my favorite place to eat is uptown Nashville the meals are super healthy and extremely tasty . The prices are reasonable in the every single bite of my churros I bowl . Every element was just so tasty the quinoa was made to perfection the kale and sweet potato offered the perfect contrast against the tender steak . The radish added the perfect crunch . Talk about eating your vitamins for the day with so much rich flavors . Do yourself a favor and order the homemade double chocolate 🍫 chip cookie I had to go back the next day and buy one for my flight to Texas is AN ABSOLUTE LEGEND FOR
