"I note that Greenery Co. is a new fast-casual, health-focused spot in Hillsboro Village rolling out a phased opening: takeout-only beginning December 8, with dine-in planned for January 4, 2021. Co-owned by sisters Caroline Gaston and Whitney Abblitt, the menu—developed by Austin-based chef Barclay Stratton—emphasizes locally sourced snacks, salads, warm bowls, sweet treats and a variety of nonalcoholic drinks; signature items include the Music City Med bowl (carrot falafel, quinoa, chickpeas, preserved lemon vinaigrette) and a Tennessee Thai salad with blackened shrimp, while guests can also build their own bowls from bases (quinoa, rice, spring mix) and proteins (seared steak, roasted or crispy chicken, carrot falafel) with an array of dressings and toppings. Seasonal offerings include carrot pimento cheese or French onion dip with crackers, roasted carrot soup with orange, yogurt and toasted almond, a soup with chili cauliflower florets, kid-friendly options, and triple chocolate chip cookies for dessert. During the takeout phase guests can pick up online orders curbside on 21st Avenue South or enter the front door to access the pick-up area; the parking lot behind the restaurant provides 14 spots (a rarity in Hillsboro Village), and starting December 8 the restaurant will offer free delivery to designated drop sites within Vanderbilt University Medical Center for area medical professionals. As employers, the sisters prioritize creating a supportive workplace with personal and professional development and guest speakers on topics like finance skills, customer service management and enhanced food safety education.
