Seattle’s Hottest New Bars, Summer 2024

"It’s tempting to go with vino at a place that looks and feels a bit like a wine cellar, but make no mistake, Guillotine is a temple for mixology. In just a short period of time, veteran bartenders Colin Smith and Andrew Larson have created a sleek list of seasonal house specialties and clever takes on classics — try the gin gimlet with yuzu kosho and snap pea for a refreshing summer sipper. They don’t take reservations, so you might want to stop by soon before this place heats up even further among Seattle cocktail enthusiasts." - Brianna Gunter

Seattle’s New Restaurant Openings

"While the name of this Capitol Hill restaurant and bar has us raising our eyebrows a bit, the place looks more focused on cocktails and small plates than beheading. Expect dishes like beef tartare, mushroom filet with faro rice porridge, and miso caramel topped french toast in the space formerly occupied by Witness. We recently checked out Guillotine. Read our first thoughts here. " - kayla sager riley, aimee rizzo

This food was disgraceful. I couldn’t even bring myself to take a bite. The steak tartare was as already grey and the vegetables plate was literally watery burrata with a couple of floating vegetables. This is literally after we wait to eat this in person but it took over an hour and we asked for it to go. They comped a rainier and some fries. They also told us they were only serving 3 different cocktails for the night and I had to ask multiple people for what beers they offered which the last person reluctantly mentioned only having a rainier available. Worse restaurant experience I have had in a long time.

Fun little place with lovely staff! The owner is very friendly and chatted with us for a bit (which is always appreciated!). The cocktails were great. We only had olives as a snack but these were delicious!

New favorite spot in Seattle! Whether it’s date night, girls night out or a birthday etc this is the most perfectly charming, classy, but cozy place. Most delicious cocktails ever and incredible elevated dishes while still maintaining friendly, fun, laid back vibe. With staff and owners that just want to make sure you have a good time no matter what. Make sure you checkout the photo worthy bathrooms too!

Great drinks made my bartender/co-owner Andrew. Nice bar, and good food menu.

Google
They make all their mixers and food in house. Amazing place and really nice staff. They also have a switch available to play with Super Smash Brothers. Ice cream dessert is custom and homemade and very special as well

I was devastated when Witness closed but wow - what a transformation and need on Broadway! We became familiar with one of the owners at a previous bar where I had some of the best cocktails of my life. Hearing he was about to open the bar in one of my favorite spaces led to months of excitement while waiting. My first visit here didn't disappoint - an amazing transformation of this space complete with the expert cocktail making that made me fall in love with the owners years ago. I haven't tried the food yet but it's looking great from what I can see. Welcome to the neighborhood...what an addition!

Google
Friendly and welcoming staff. Although a bit pricier than bars and restaurants around it, It's well worth it for the quality of food/drinks, service, and attention u get here. Owner: Andrew is friendly & great to talk to too!

Yelp
Stepping into this spot was like walking into a secret wonderland for foodies! From the moment I sat down, it was pure magic. The fries? Oh my goodness--crispy, golden, and completely irresistible. I had zero willpower, and no regrets. The steak tartare? Delivered in a **bone**--yes, you read that right--like a regal dish straight out of a medieval feast. It was beyond delicious. And just when I thought things couldn't get better, the clarified espresso martini hit the table. It was silky, smooth, and totally mind-blowing. Can't wait to return for more of their inventive menus and whimsical cocktails! The chefs and owners were so attentive and wonderful to chat with. #FoodieHeaven.

Yelp
The owner was behind the bar making drinks and chatting up customers. The vibes were chill and welcoming and the cocktails were served in coupe glasses with long stems! They are so cute!!! I felt super fancy sipping my perfectly crafted Gimlet. Next time we'll try some food. It all looked great.

Yelp
Meh. This little bar looked promising, but their menu and service were both extremely underwhelming. The moody lighting and flowers hanging from the ceiling give a really fun ambiance, but I don't know that the decor quite makes up for the expensive drinks filled to the brim with ice, the nonchalant attitude of the staff, or the small menu. I ordered the "birds of pain" and it was tasty enough, but it consisted mostly of ice. I'll skip this on my next trip to Seattle.

Yelp
This is a cool spot! The bartender was really friendly and cool and the drink list was interesting. The kitchen menu was also small but unique, which I liked. They kind of have a spooky but classy vibe which is fun. I'd definitely go again!

Yelp
went in on a saturday night and was able to find a seat at the bar right away. i liked the vibe and interior Guillotine gave. the bartender was really nice, i don't know what to get so he made a drink based on my preference of fruity and sweet cocktails. cocktails around $16-18. cute date night spot or to bar hop with friends on cap hill night

Yelp
Had great bites and service tonight at Guillotine. Really enjoyed talking to the owner Andrew. He's super passionate and excited for his new spot! Everything we drank and tasted was delicious. Beautiful bar and super fun bathrooms!

Yelp
Wow, the Miso French Toast is the most amazing dessert I've had in a very long time. The perfect mix of umami and sweet, it contains crunchy caramelized brioche French toast, wakame ice cream, miso caramel, and hazelnut furikake. The salty touches combined with the sweet turned into a perfectly balanced dessert to go with our cocktails. I HIGHLY recommend it if you visit this establishment. I also enjoyed the Night Queen cocktail which was absolutely delicious. There's clearly a lot of love behind this new venture for the owners. Such wonderful attention to detail and service!

Yelp
Guillotine has been on my radar for quite sometime and while looking through my list of places I have been wanting to try I stumbled upon the restaurant during my google search through the neighborhood. Went through the Instagram and website to see what would be the dish I would want to try. Loved the simplicity of the menu and the ingredients of the dishes so I was sold on going. Took a stroll through the hill to get to the restaurant and was told by the owner Andrew that they would be open at 5pm, so I killed sometime walking around and come 5pm I was ready to head on in. The atmosphere and ambiance of the space is very minimalist but in a very good way. Upon sitting down I ordered myself a mocktail that was up to bartenders choice on the 0 proof they have. It was the take on a phony negroni with a mezcal mix with, it was a interesting mix and I liked it. I was ready to look at the menu after getting my drink and was told that they are fixing up the menu so the entree's I saw online was not on the menu anymore. I had been on a pasta kick lately so I was curious if they had anything with pasta and I was greeted by the chef who had been working on a new dish that was beet infused pasta, zucchini, summer squash, broccolini, nuts, a champagne butter sauce, and grilled burrata on top. A very flavorful dish that was so soft but also very filling. Talked with Andrew for a bit after my meal about the story behind the restaurant and his background in the industry and you can tell the passion behind the words that Guillotine will be a staple in the community in due time. I can't wait to try the new menu when it comes time. Give Guillotine a shot if you are on the hill. They also open until 2am on Friday's and Saturday's so this is another place to hop too during your night activities.

Yelp
Poor poor service. No water refills, forgotten food, slow slow drink orders. Food was uninspiring For 18$ per drink you can do so much better in Seattle.

Yelp
My friend was visiting from out of town so we came here to have a few cocktails while we catch up. As soon as we walked in the bartender Cody came up to us to give us our drink menu and water. He was very friendly and attentive. He explained the drink specials so we can select our drinks to our likings. He came over several time to check on us. The owner came over to explain how he created the drink specials and showed us videos on his Instagram. I'll definitely be returning here again to try out more drinks and their food.

Yelp
BEAUTIFUL space, even down to the bathrooms (see pic). The cocktails were incredible, the detail and nuanced flavors were so unique and tasty! We got the oysters (great), jerky (10/10 A MUST), mushroom filet ( the farro rice porridge was amazing), and the trout almondine pasta (my fave).

Yelp
I literally never leave reviews but the service was so good that I felt compelled to leave one. Colin was such a delight and the drinks he made were perfect. We tried the beef tartare and then Colin recommended the jerky which did not disappoint! I am already looking forward to coming back again.

Yelp
Do not pass on your chance to try Guillotine! The food was incredible, such rich flavors in every bite! The menu goes above and beyond! The cocktails are amazing, unique and delicious! The service is super friendly and the bartenders are top notch. I will come back again and again. Check this spot out for date nighta, celebrations or just to have a good time - they've got it all!

Yelp
Visited on a Sunday to support the pop up menu. Food was amazing as were the cocktails. Colin did a fabulous job serving our large group with signature drinks. Cocktails were equally superior to the speakeasy bars we also frequent. Will 100% return....especially since the owners invite entry level chefs to prepare the menu!! Good karma for the owners. Will spread the word

Yelp
Wonderful service. Drinks are very sexy and food is superb. Definitely drink and eat here

Yelp
Happening new Capitol Hill restaurant with a boho-minimalist vibe and a creative flavorful menu. We only had time for appies and a mocktail worth mentioning, with bright cinnamon-citrus-cardamom notes. The oysters were light and fresh, served with creamy hot sauce and a perfectly balanced mignotte dip. The forage and harvest tempura-like vegetable platter boasted an exquisite batter. Mental note: return for the full dinner experience! Great service too, but I'm biased ;-)

Such a creative and satisfying menu. An inviting environment with exceptional service. Delicious local fare and beautiful presentation. A must try new place, you don't want to miss!
