"Intimacy sets the tone on the rooftop of the glitzy Ten Twenty Spring building beside Celestia, where chef Fuyuhiko Ito beckons you to pick up a delicate chopped squid nigiri from his hand and watches for every nod and smile as it falls apart in your mouth. The $275 omakase stacks layers of salinity and sharp acid—blended soy sauces, good pinches of salt, and caviar for brine; ponzu skin and juice, ginger, and red vinegar for tartness—liberally used yet balanced with the fish and rice. Exuberance peaks with toro piled ridiculously high with shaved white and black truffles and caviar, decadence closes with wagyu nigiri finished with garlic chips, and the akami stands out for its simplicity and finesse; stick to wines by the glass while the beverage selection is being beefed up. Glass pendant lights shaped like oversized sun hats, low-fi house drifting in from Celestia’s live DJ, floor-to-ceiling windows framing a breathtaking Midtown view, and the sweet, smoky scent of torched red miso make the room feel glamorous—reminiscent of bougie Design District Miami and Buckhead’s Umi. Ishin Omakase is truly world-class. I’ve had top-tier omakase in NYC, LA, hidden gems off the Strip in Las Vegas, and unforgettable experiences across Vietnam (yes, VN!) and Japan, and Ishin stands confidently among the best of them. This is authentic Edomae sushi done right. No over-the-top toppings, no distractions. Just absolute respect for the craft. A true master understands that great omakase is about letting the fish and rice shine, and Ishin delivers that philosophy flawlessly. Every piece of nigiri is precise, balanced, and intentional. You can taste the discipline, restraint, and decades of technique in every bite. What makes Ishin even more impressive is the value. In other major cities, this level of quality would easily cost two to three times more. Ishin delivers a five-star omakase experience at a very reasonable, comparable price without cutting corners. If you appreciate true sushi craftsmanship, exceptional nigiri, and an elevated yet honest omakase experience, Ishin is a must. This is the kind of place that reminds you why sushi is an art form.

The food 3.5/5. Their Professionalism 2/5. The décor 5/5.  My overall experience at Ishin was Posh, but aggressively overpriced. It is a very beautiful place for a date night and that is even more amplified for NYE Celebration. They had a DJ and live music that was an absolute bonus. It was my third time being at the Celestia, but my first experience at Ishin. I really do wish I was more wowed by the food. The first two courses, including sashimi, were just fair. The cuts were quite thick. I was not a fan of Hakata Maki as well.  The nigiri was an absolute highlight and each course of nigiri got better. I have no complaints about their selection of nigiri at all. The miso cod was very flavorful as well, but maybe a little overcooked. I was quite disappointed in their choice of dessert – the dessert chef- has amazing choices on the Celestia – the Pistachio Brownie and the pastry the is shaped like a peach are phenomenal. I expected the same caliber but was given a sorbet.  Overall, for the price point, I would suggest Mujo, Omakase Table, or Ryokou to start. They have Michelin ratings at or just below the price point. These experiences have made no mistakes in their lineup of food and come with a more engaging staff. Professionalism. Upon our first visit to Celestia, we met Julie. She was very nice and explained the concept of the restaurants. We had such great experience that we booked Ishin for NYE immediately at $275per person. NYE is our anniversary, so it was day that we were really looking forward to celebrating and planning our anniversary around this dinner. However, 4-5 weeks after we booked it and 2 weeks before our reservation, Julie called us with an increased price of $200 or 100 per person.  She didn’t apologize for the inconvenience but rather suggested a trivial solution of moving our reservation to the next possible weekend – which would not have been our anniversary or NYE. We had no choice as other omakases had full reservations or not having an NYE dinner. I had hoped that the food would have been the saving grace.

Chef Ito absolutely delivered. We hosted our holiday company party here last night, and the entire experience was flawless. The food was phenomenal. Every course was thoughtful, fresh, and beautifully prepared. You can feel the precision and pride in what Chef Ito puts on the plate. The service was out of this world. Attentive without being intrusive, warm, and dialed in from start to finish. Our group felt taken care of the entire night. Overall, it was a perfect experience and exactly the kind of place you want to bring a team or celebrate something special. Chef Ito deserves every bit of praise, and we’ll absolutely be back.

Ishin is a very special Omakase Bar to experience chef Ito’s amazing original Japanese food. He personally prepares everyone’s food with much of love and professionally. It’s a very great and special place to be. Also they have rooftop bar with amazing view. The service, drinks and food quality excellent. I would recommend this place anyone looks for quality. Very impressive.

A genuine sushi experience. Chef Ito demonstrated the pinnacle of the expression in both the craft and the cultural heritage. I've been lucky to experience a number of wonderful restaurants and sushi in particular, but this set a new standard. Staff brought true warmth and service was impeccable. Wine and sake pairings perfectly complimented every dish. This was a delightfully human experience in a world that is making those harder and harder to come by.

Had an opportunity to eat at Ishin last night, and I would recommend this restaurant. The space is beautiful, the chefs and staff are amazing. The chef uses the freshest fish that is flown in from Japan daily.
