Jus' Poke keeps it simple by focusing on just tuna in seven pre-marinated flavors, including the original laced with sesame oil and crunchy bits of ogo seaweed, or wasabi poke punched up with serrano chiles and flying fish roe. There's usually a line—made up of local office workers on weekdays, post-beach crowds on weekends—but it's always fast-moving.
