One of few sushi restaurants open on Sunday in St. George, Kabuto is surprisingly great sushi. Many of their rolls are inventive, but delicious. We tried a pretty diverse grouping of the Jimmy Special, TTL, and Don't Tell Mama rolls, along with salmon nigiri. For all of this and a couple of sodas, I think our bill was around $70, which seemed reasonable for a ton of food.
The Jimmy Special was fantastic if you like a lot going on in your rolls. It was a little intense, but I would definitely order it again.
The TTL was our favorite for sure, though I did have them add rice to it instead of just the soy paper. I think it was needed, but I'm sure it's good without it as well.
The Don't Tell Mama roll is fascinating and honestly we never did decide if we actually liked it or not. The texture was alright for the most part but some bites were different than others. The sesame mustard sauce on top was a little intense for my liking. I think it would have been better on the side so you could control the amount yourself.
The salmon nigiri tasted great and super fresh, though a little sloppily cut.
My main reason for a 4 star rating here is mostly due to the overall strange setup of the restaurant. In the middle, they have what clearly used to be a hibachi grill space with seating all around it. They've taken the grill out and filled it with a few plants. It just seemed like a bit of a weird setup, and I wouldn't have wanted to sit there. They also have a few tables divided by walls, like they clearly should have been booths. The entryway is wide open, so when you walk in, there isn't a host stand or really anywhere to stand in any kind of order. We ended up getting cut by someone that arrived after us despite him trying to tell staff we were there first, just because of this. If it had been a larger party or a busier day, this would have been very frustrating.
