Kabutokaji – Pozuelo de Alarcón - a MICHELIN Guide Restaurant
"An elegant and sophisticated Japanese restaurant that never disappoints and clearly states its working philosophy in the premise: “Cooking to stir the emotions”. The à la carte, which always features immaculately prepared dishes, focuses on Japanese cuisine that is built around Spanish ingredients, and includes interesting fusion plates such as pig’s ear gyozas and usuzukuru of white fish with a “gaditano” adobo sauce. The selection of sakes is complemented by a menu of premium teas." - Michelin Inspector

Food is completely unreal - taking Japanese fusion a step further. The team is also making a real effort to make the environment safe post COVID and succeeding at it. Will definitely come back with regularity.

Extraordinary cuisine. I thought I knew Japanese food until I was taken here. Everything is outstanding, just delicious. It's not cheap, but it's an unforgettable experience I heartily recommend.

Very well done sushi and Japanese food in Madrid. Worth the trek out to Pozuelo. I was surprised by how well the agadashi tofu was done.
