Portable and Affordable, Pakistani Food Cart Karachi Kabab Boiz Is Right for the Moment | Eater NY

"These charcoal-grilled rolls aim to replicate Karachi’s ubiquitous late-night street food: tender, slightly charred meat wrapped in a flaky, layered flatbread, small enough to fit two — or even three — in one hand for the perfect portable snack that stays in transit. Launched by Syed Mushbir Jafri, Azhar Parvez and Kunal Parwani after debuting at the Queens Night Market in April 2023, the cart was born from friends who grew up in Karachi, reconnected in the U.S. after moving around 2012, and “pieced together the business idea, armed with an outstanding family recipe from Parvez’s father.” Every morning, the cart announces its evening location on Instagram; you can typically expect to find the cart in Queens, around Long Island City and Astoria, on weekdays from 2 to 11 p.m. Founder stories and roll culture are central to the concept: “There are people who eat rolls twice a day as meals,” says Jafri, and Parwani adds, “You’d have 15 friends going out having rolls. You would go on dates with rolls. You would have fights while eating rolls,” says Parwani. “[Rolls] bring everybody together, regardless of the situation.” The team emphasizes differences from other kathi-roll–style vendors: they use a homemade pani paratha, a half puri and half paratha mix, for a unique flaky texture, and a charcoal grill setup that “imbues the meats with a noticeably smokier flavor.” The current menu lists three rolls — beef Bihari, chicken tikka, and chicken malai — served with homemade sauce and onions. The chicken tikka, the most popular, is marinated in a spicy concoction of yogurt, chile powder, and spices before getting a smoky kiss on the charcoal grill. The beef Bihari is marinated for 48 hours in a medley of fried onions, chile flakes, and other spices imported from Pakistan so the beef becomes tender: “If somebody’s had our beef Bihari, their pupils dilate, and they’re like, ‘Oh shit, this is good,’” says Jafri. The chicken malai is “creamy with a whisper of spice,” made with cumin, coriander, and green peppers. The founders hope to expand to more diverse chicken parts and more sauce options. Operationally, Jafri and Parwani balance full-time finance and consulting jobs and sometimes commute from Mechanicsburg, Pennsylvania, and Boston to help the cart at large events, while Parvez — who has lived in Queens for 12 years — quit his job to manage ingredient sourcing and kitchen responsibilities. The cart’s bright orange exterior and a sizable crowd (including loyal customers who drive from Long Island and New Jersey) draw passersby and newcomers alike; Abeer Minhas, whose family is from Karachi, said, “I am a huge fan of kebab rolls, and my family is directly from Karachi. It’s an authentic kebab roll experience, which is hard to find in New York.” Anecdotal first-time reactions include an MTA worker who stopped for lunch saying, “The elevator keeps shutting down, so we decided to finally take a lunch break. I’m looking forward to the spicy one,” and a passerby who compared the offering to Indian kati rolls: “I know Karachi is a place in Pakistan and these rolls are similar to those I’ve eaten in India,” he said after ordering the chicken tikka roll. “Getting compared to the big brands back home is an achievement,” says Parvez." - Jess Eng

It was our 2nd time trying out paratha rolls from karachi kaban boiz, halal pakistani karachi style. 1st time, we had the rolls at Queens' night market. I tried to order 1 of each roll. They had original behari boti, tikka, and malai, and another with garlic mayo added in these. The person at the cart said they only have mint sauce, so I ordered 2 of each. Rolls are very petite, like 3 to 4 bites, and you are done with your roll. You definitely need 2 per person. It didn't take long to get my order as I was the only customer, I think it took around 10-15mins. Beef behari boti was well balanced. 1st bite of chicken tikka kicked me back to pakistan. You taste that charcoal taste, which is a bit hard to get here. Something was off with malai boti, i think it was bit heavy on white pepper and was missing touch of lemon and definitely needed a sprinkle or 2 of salt. It felt like roll was stuffed with masala/marination/yogurt sauce more, very little chunks of chicken. We remember, malai boti roll was better then today at Queens night market. Portion wise, rolls are expensive. They should bring the price a little up and load your roll a bit to make it a meal as we get mostly from halal gyro places. If you don't want to add more chicken/meat, add more salad. I believe karachi rolls are just meat, onions and chutney wrapped in paratha so to keep it authentic add more onions and increase chicken a little bit as currently, It's snack size, definitely not a meal. We would rate rolls as per taste as follows: Tikka roll: 8/10 Beef bihari boti 6/10 Malai 2/10 And yes, you can ask to add extra meat at extra cost and also get extra sauce for $1. I might stop by to grab Tikka roll if I am in the area just for the sake of supporting them, but nothing crazy to drive out for. Would strongly recommend/ suggest the management to work on portion size. Finding halal authentic pakistani taste is hard so we should work on serving our community better. Overall, well cooked meat and good paratha rolls.

Way too overpriced for the portion. Beware, if you're an adult, you'll need at least 4 rolls. Forget about flavor of Pakistan, There's no flavor at all. Meat was smelly, god knows when it was prepared. They didn't even put enough sauce in it.

This is iconic and authentic South Asian street food from Pakistan. It's rare to find a place like this in the country that cooks their kababs on a charcoal grill. The flavor was amazing and does its cuisine justice. The rolls have crispy and flaky bread with tangy and tender meat. The biryani tastes like it would at a desi wedding banquet. It tastes best when served fresh but it was so good that I took some home. If you go to Vital gym, this is a great way to load carbs after climbing and exercise. The service is also great and you can tell they really care about freshness.

Would give more stars if I could!!! I was visiting from DC and their rolls would be a solid reason for me to come back. Usually desi restaurants/carts don’t live up to the flavours we’re used to in Khi but their rolls absolutely delivered. Can’t wait to go back and have more of these!

Since moving to NYC, I had been searching high and low for that old-school hot and spicy Pakistani kabab roll ,the kind that truly hits the spot. I was honestly super disappointed until I discovered Karachi Kabab Boiz. The taste is absolutely authentic , just one bite took me straight back to the streets of Pakistan. This has become my go-to comfort food, and I couldn’t recommend it more. Every Pakistani in NYC should give it a try and let the nostalgia kick in!
