12 New-Wave Vermouth Bars In Spain - Barcelona - The Infatuation

"The gilda: a skewer of briny ingredients like anchovies, guindilla peppers, and manzanilla olives. It’s understated, elegant, and satisfyingly fun—just like La Gildería. The space falls somewhere between an urban brewery and an old-school tapas bar, with big windows letting in plenty of natural light. As the name implies, gildas are the star here. While the classics shine, their inventive variations are what set them apart. Don’t miss the langostino gilda, skewered with prawn, olive, and quail egg, or the pulpo gilda, featuring octopus, pickled cucumber, pearled onion, and an olive. Grab a vermut on tap and settle into a Madrileño afternoon, surrounded by customers pointing out their gildas of choice and clinking glasses with each round." - david neimanis

The 34 Best Restaurants in Madrid, Spain | Eater

"Olives, brined fish, and vermouth have always been integral parts of Madrid’s aperitif culture. But, weirdly enough, it is hard to find a place that really devotes its menu to them. La Gildería in the La Latina neighborhood (near the Rastro market) honors items like gildas: olive skewers that draw their name from the Rita Hayworth movie of the same name. The rest of the menu includes Murcia’s version of the ensaladilla rusa (potato salad), canned mussels and razor clams, and an octopus sandwich with Basque chile pepper mayo. Vermouth accompanies every bite, with brands sourced everywhere from Galicia to Cataluña. Drink it on the rocks or with a splash of gin. Know before you go: For a late night aperitif, head to Gilda Haus, Gildería’s nightclub in the Malasaña neighborhood." - Paula Móvil
