Limited Edition Sushi in Seattle is an intimate spot where masterfully crafted sushi courses shine, thanks to a warm chef and impeccable service.
"Ltd Edition is another exclusive around-$150 sushi omakase in a city where those are not too hard to come by, but this one's worth it. Just wait till the uni cart comes out—there are few moments more exciting than receiving a buttery sea urchin hand roll as if it were a sidewalk snow cone. Whether you sit at the counter or high-top table, you’ll receive a history lesson on every piece of fish that comes out, and know exactly how to eat it—one bite or two? Chopsticks or hands? The Dungeness nigiri in particular is a standout way to experience the Miss Universe of the PNW crustacean world, with succulent crab meat and a gelatin topping made from its own juices. Be sure to enjoy it with someone who will equally appreciate crab-flavored Jell-O. Ltd releases bookings at 11am on the 15th of every month for the following month, and we wish you the best of luck when the entire Seattle population clicks around the reservation platform at the same time. If you don't get in, add yourself to the waitlist and hope for cancellations." - aimee rizzo, kayla sager riley
"Ltd Edition is another exclusive sushi omakase in a city where those are not too hard to come by, but this is one you should be prioritizing. Whatever you need to do to book this 16-seat Capitol Hill spot, be prepared to do it. If it takes setting four alarms, buying your neighbor's kid a drum set, and constructing a booby trap to wake you up the morning that reservations are released, so be it. The $170 meal includes special bites like black cod and Dungeness nigiri with succulent crab meat and a gelatin topping made from its own juices. But just wait till the uni cart comes out—there are few moments more exciting than receiving a buttery sea urchin hand roll as if it were a sidewalk snow cone. And don’t skip the sake pairing that is generously refilled after every sip you take. "Omakase counters can be a bit stuffy, but Ltd Edition keeps things loose. Chef Keiji Tsukasaki, a former DJ, can simultaneously sip a beer, chat up his guests, and guide them through a too-many-to-count-course meal, plus a carefully curated sake pairing. Everything on the seasonal menu is good, but one standout recently was the monkfish liver, served near the end of the meal — smooth, deep, and rich, it’s a surprising but totally welcome way to do dessert. –Harry Cheadle" - Sophie Grossman
"LTD is a party. Chef Keiji Tsukasaki is an incredible host, maybe because he used to be a DJ, maybe because he likes being around people. He’ll hold court with a beer in his hand as he walks you through the specialty sake he’s pouring (with a heavy hand), he’ll explain why his monkfish liver is so deep and rich and powerful (he pays for the S-tier-quality stuff), he’ll make you laugh — then you’ll realize that this is maybe the best sushi you’ve ever eaten? A seat at his counter is $170 and well worth it, or $140 for a seat at the tiny restaurant’s table, which is good if you have a larger group. Either way, getting a reservation can be a challenge." - Harry Cheadle
"This 10-seat Capitol Hill sushi counter, which opened during the height of the pandemic, offers an exquisite omakase experience ($120 when seated at a table and $140 at the sushi counter) with an optional $48 sake pairing. Seattle Times food critic Bethany Jean Clement once described chef Keiji Tsukasaki’s sushi as “incredible,” and said that the otoro made her cry (in a good way, not the wrong way). Tsukasaki, in addition to being an exceptional sushi chef, is also a charming host and a sake connoisseur who pours with a heavy hand." - Harry Cheadle
