"Created by Ryan Chetiyawardana and sited on the ground floor of the South Bank’s Sea Containers overlooking the Thames, this glossy hotel bar pairs striking baby-blue interiors and blue velvet seating with a golden, uplit counter. Cocktails are unconventional and concept-driven, each served with a detailed origin story that can include fermentation, house distillates, and bespoke liqueurs—yet the drinks are also reliably well-mixed. A standout is the Unfiltered Martini, where steamed potatoes are fermented with a “full spectrum microbiome,” blended and strained, then combined with Boatyard vodka to produce a silky, floral, slightly lactic martini." - BySam Stone
