Bottom line: I had an OK experience with Mulino recently, but with the Tonarello Carbonara coming in as a bit heavier than expected in texture and a few maneuvers to get in at a desired time even though they had what appeared to be many empty tables, I have to go with 3.5 stars but feel they have 4 star potential.
The Deets:
I have been wanting to go to Mulino for a while now and a group of us got to go recently. There was a gap in availability when trying to get a reservation, either 545pm or 730pm so went with 730pm as the former was too early for us to arrive. I had called to see if can try to get moved up to 630pm or 645pm but was not possible I was told, can try 7pm...we came early anyway to enjoy the bar and then we were seated at a table after all in our 630-645pm desired time to our surprise. And it was not crowded as noting a good number of empty tables, so a bit puzzling for all of us how that all was done. Anyway, glad we were seated early, we were shown to our table. The restaurant itself has a great atmosphere and look. We decided to get a couple of bread baskets ($6 each) to get things started, and drink orders were taken. The bread was wonderful, good crust, light and delicious inside. I will mention that some noted some sticker shock on the $16 cocktails on the menu but there was also beer/wine/cider options as well. For my entree, I went with the Tonarello (carbonara with organic eggs, Italian guanciale, black peppercorn, pecorino). I have to say my constant search for a nice light carbonara dish in the NC Triangle area continues...when this dish came out it was a pretty heavy type of carbonara so I was a bit disappointed on this aspect (do a internet search for carbonara images such as Google for example, and you will see the majority of them look light instead of a heavy cream-like appearance). The taste of the tonarello dish was good in itself, but just heavier than I had hoped for. Others were satisfied in their choices, the Tagliatelle (bolognese with fresh pasta, beef and pork ragu, reggiano, San Marzano) got good feedback especially within the group. For dessert, I had a cannoli (made with fresh ricotta and chocolate chips) and it was great, enjoyed this dessert here that they state is made in house. I will mention our server was helpful, positive, and made sure we were taken care of during our meal. In summary, I had an OK visit to Mulino...with the reservation maneuvers and the disappointment at the heaviness of the carbonara I can't go with a full 4 stars for this visit, but a solid 3.5 star experience this time around.
