Neige d'Été

"Summer Snow – the name is eminently poetic, thus befitting the work of Japanese chef, Hideki Nishi, who trained at Taillevent and the George V in Paris. The oxymoron also hints at the plays on contrast and minimalism that are the hallmark of this craftsman. Painstaking Japanese precision and a repertory as Gallic as the Marseillaise come together in exquisitely curated, subtle recipes with a strong focus on arrivals of fish and vegetables straight from Brittany and barbecued notes. Poised, perfectly judged and rich in counterpoints, the food is as stunning as the snow in summertime…" - Michelin Inspector

Fabulous experience and overall the best restaurant experience I've ever had (despite this not being my first time at a Michelin star restaurant). The highlight was the first entree (the yellowtail), and the vanilla marinated radish that was part of this (pictured) was particularly divine. Really excellent and would recommend to others. Thank you to the staff and chefs.

#8th in my public list on Googlemaps. An improbable balance between delicate flavors. A small miracle, like a summer snow (Neige d’été) There’s a lot of competition when you’re a Japanese Chef in Paris. It’s by far the most represented nationality in the Étoilés Kitchens (French aside, and I’m not even sure). This chef (worked in George V) is in the leading one star group. Two interesting things here. First, and you shouldn’t be surprised, it’s the quality of execution. Superbe. Second, it’s the balance and the width (in taste) of its dishes. He does not hesitate to use a large spectrum in a dish and manages to balance it. Like feeling a snowflake in summer. A striking contrast delicately balanced. The service is of a good étoilé with its formalism. The crowd was family, friends and couples. I did not see business but I would have a business lunch here. I guess the location is not the best for that crowd. A top tiers one star Update 2022: Went back. The crowd was roughly the same. The service was still excellent which is consistent with the previous visit. Some element of the menu were still there but most were new or changed. You can check my pictures/videos to see the 21 and the 22 (although the pics may not be attached to the review but just uploaded). I ve also noticed some Spanish flavors, which is also consistent with the last visit. A very solid one star.

Google
Four stars for the pleasant staff and consistent execution in various techniques. Not all of the dishes "hit" and in some instances the flavors were indistinct. There wasn't a natural theme or flow in flavors from one dish to another that you might expect in a 2+ hour tasting menu. Service wasn't perfect - empty wine glasses sat on our table for most of the meal after we had finished our first glass. The Japanese influence seemed minimal, aside from a couple perfunctory references (such as use of binchotan on a couple items).

We had a pleasant experience at Neige d’été today. The food was nice overall and the staff service was exceptional. The only complaint I would have was the mussel aperitif (it wasn’t too fresh or it had a really strong taste). But that’s just my opinion with my particular taste. Maybe it’s perfectly fine for other guests. We are excited to try their sister restaurant Pilgrim another time and will definitely return to Neige d’été as we live around the corner. Thanks to the head chef, the many sous chefs, and the entire staff at Neige d’été for today’s experience.

Google
Unique mix of French gastronomic cuisine and Japanese influences. Staffs were professional and nice. Japanese-touched French dishes were really interesting and the wine pairing was amazing. Especially, baba au rhum with a glass of ratafia was incredible! Amazing experience overall. Highly recommended.

Google
Well located in 15th district, Neige d’été is a Japanese fusion Michelin 1-star restaurant. The dishes are delicate, especially the main dish deer meat is quite nice. The service is ok, not that amazing compared to other Michelin Star restaurants, for example ACCENT. But they are very sweet to give us a small cake for the next breakfast. Overall score is 4 out of 5 to me. I’ll recommend it to my friends.

Google
The greatest culinary experience in Paris. Staff is ver knowledgeable, wine pairing mastered to perfection, combination of Ingredients in every meal initiates dance of flavors and emotions. Neige d'été surprised me with their raw fish. In any other place I wouldn't even dare to come close to raw fish, but here they performed magic. The fish was not fishy, instead it was soft, buttery and sweet. Their process is amazing in itself. First they degústate the raw fish, suck out all the blood, keep It in the fridge for a calculated amount of time prior to seasoning it with their vinegar. The wine pair makes the meal a celebration of French culinary history. The chef is Japanese, who with his precision delivers excellence and the standard of quality with every bite.

Yelp
How cute is the name of the restaurant. It means Summer Snow. Very fitting. The restaurant is very minimalist, white decor, clean lines. Chef is Japanese and that's what intrigued my husband. He loves Japanese food, light and subtle but flavorful yet complex. Poetic man he is. We had the 8 course dinner. Not sure how many courses we ended up eating, like 10 courses. The portion was not large but we were still very full by the end of dinner. The team was pretty much all Japanese. Chef got his Michelin star not long ago and as we began our dinner adventure knew exactly why he deserved the star. The courses were very thought out, refined and perfectly executed. From the plates and silverware, to the wine/sake pairing. We knew which elements were clearly Japanese and which were French. I really did enjoy every course. Some stand outs were the squid 3 ways, mushroom quinoa risotto, and the duck cooked over Japanese charcoal. I can list all the nuisances, fragrances, textures, and taste of each dish but I still wouldn't do it justice. It was a wonderful meal by a talented chef and team. Front house service was very polite yet warm. Would recommend to friends!

Yelp
Tucked away on the ground floor of this quiet street sits Neige d'été. Unlike most other Michelin-starred restaurants, Neige d'été doesn't have any large, glaring signs with its restaurant name hanging outside. The curtain behind its small, glass-door entrance is always drawn, ensuring privacy for its customers. The restaurant name on the glass door is also fairly small, making it easy to miss the restaurant if you're not using following google map or if you're not familiar with the area. We made reservations right before they received their first Michelin star, so it was easier to get a table back then. I'm not sure if there is a direct correlation, but I found it much, much harder to make another reservation right after they received their much-deserved star. The moment I pushed through the glass door (after pacing around outside for a bit waiting for them to open up the curtain and finally realizing that they're actually ready for service), I was welcomed with a team of Japanese waitresses who took my coat and showed me where my table was. As I was waiting for my friends, I noticed how comfortable the décor made me feel. The all-white interior, paired with the wooden chairs that are slightly peeling off, offers a classy yet unpretentious dining environment where you feel very conscious of every movement. The all-glass windows that separate the dining room from the kitchen also offers the customers a chance to watch Chef Hideki Nishi and his team prepare the food as well as for the chefs to see the customers' reactions and whether they need to start preparing the next course for the table. The service from the moment we stepped foot inside the restaurant to the moment they helped us put our jackets on was, unsurprisingly, spectacular. It's no surprise that Neige d'été would be awarded with a Michelin star and I'm sure it's a restaurant that I would like to go back again and again (I already paid a second visit and as long as I can still afford it and can make a reservation)!

Yelp
Our first meal arriving in Paris and it did not disappoint! We had the 4 course tasting menu with a wonderful combination of seafood and meats. The plating is what one would expect at a Michelin rated restaurant: clean lines with complex layers and colorful notes to make it pop. The service was wonderful and attentive. My hubby had the chicken which was super succulent and tender with amazing risotto. I ordered the pork option for my entree and was my least favorite dish. Although portions of it was tender, the cut of the pork had pieces of very tough tendon that was not edible. I should have ordered the beef dish as it looked really good at other tables. The chef greeted us at the end of our meal. You can tell he really puts his all in his cooking. Overall, it was a delightful experience and a place I'd frequent if I lived in Paris. Great work Chef and Congrats to your Michelin Star!!!

Yelp
I wish there was some way to acknowledge that this was the best meal I've had in recent memory. I found this restaurant on a food group I'm a part of on Facebook. I made reservations via email about 3 weeks out. We had trouble finding it as it is not very clearly marked. When we entered I was surprised at how small the restaurant was. There are maybe 12-15 tables in the whole place and two tiny rooms, one with the open kitchen. Decor is minimalist but chic with white walls and grey curtains. All the staff are Japanese and speak Japanese, French and a little English. We decided on the longer menu, which was very reasonably priced. Each and every course had me in awe. All the ingredients were incredible and the service was professional. This is my new favorite meal in Paris. Especially for the price!

Yelp
We we lucky to be able to get reservations last mins that our hotel help us book. The places is very simple but elegent. The service is on point! And the food...OMG the food was mouthwatering. I will let the photos speak for themselves. No filters needs since the food presentation was genius! Only thing was the wine that poured was bit on the light handed side and for 10 euros a pour only wished there was more per pour. My glass was not even a 1/4 full when they poured it. Ended up paying for a half a cup of wine for 20 euros. Otherwise my experience was excellent and would go again. From the effiel tower it's about a 15 mins walk.

Yelp
As other reviews stated, the food is excellent, the service is very attentive, and you'll feel like a prince(ss) during your meal for a reasonable price - €40 the lunch menu, even on Saturdays (2 appetizers - 2 starters - 1 main - 1 dessert - 1 sweet). It is a perfect place for an intimate, romantic meal, without it being too intimidating. Careful through: you have to pay for water (€3 for unlimited refills) and some dishes come with a supplement (+€15 on your €40 menu if you take the delicious beef that the waiter will show you at the beginning of the meal).

Yelp
This restuarant has a very diverse set of cheeses that all have a decadent opulant flavor that rivals those of switzerland. The closest comparison ive had would be from California

Yelp
WOW. how are there so few reviews for this amazing restaurant who recently got their Michelin star??? I came here with my cousin who I found out was randomly in Paris the same time I was. I made reservations a couple weeks in advanced and was so glad I came with my cousin. This place is hidden and quite small but when you walk in its like another world inside. Its clean and simple inside with like 6 tables inside. My cousin was running a bit late but they were very gracious about it. We did the tasting menu with the wine pairing because you are in Paris, WHY NOT?? it was a 7 course tasting menu with wine pairing for like 150 euros but there were other courses that weren't included which bumped it up closer to 10. Everything was amazing. I remember the foie gras course, the octopus was perfectly seasoned and cooked and wasn't chewy, I would of eaten my cousin's if she didn't already finish hers before me. My favorite dessert was the strawberry with little jellies on top with jasmine ice cream. The wine pairing went beautifully well with the courses and I was absolutely amazed by everything. All in all everything was perfect. The food was perfect. The service was perfect (especially the waiter, *swoon* he was super adorbs and looked like a cuter Japanese version of Steven Yuen on walking dead). They did have some difficulty speaking English but honestly, I just needed the basics and just experience everything for myself. A perfect meal

Yelp
This place is just ok, in my opinion. You can tell ingredients are top quality and the service from staff is elegant without being snobbish. However, I felt like quite a few of the dishes lacked flavor. Perhaps it was the chef's intention to make you appreciate the fresh ingredients more, but it wasn't too my taste. Lots of Japanese clientele seem to come here, perhaps because most of the staff are Japanese. I would come here if you're sick and tired of french food and want something lighter but still elegant, and not traditional Asian. For the price you pay, I am not sure I would consider this place worth coming back as I have a whole list of restaurants I want to try out. The dessert was excellent though. Oh and sound levels inside the restaurant can get a bit high as the decor is minimum (although they have table cloths)

Yelp
This was hands down the best meal I had during my Paris visit. Beautiful and intimate atmosphere. Every course was delicious and the service was impeccable. I would definitely recommend for a memorable evening out. The wine pairing was worth every penny!

Yelp
I had lunch at the restaurant. Only set menu was offered for 45 Euros. Contrary to previous review that the staffs do not speak English, each item were explained to me in English, and the reservation confirmations calls were in English too. The restaurant is at a residential area. Eating there I felt like I'm paying for the ingredients, exquisite preparation of food, and excellent service, not hefty rent. I had the perfect melt in the mouth fois gras with zero gamey taste. I was also impressed with the care taken into the preparation. For example, hidden under the crab meat appetizer were some pickled red pepper and vegetables cut into perfect 2mm cube. Looking at it all I can think of was if I were to cut them, first I'll lose my eye sight if not my fingers. I also enjoyed the decoration of the plates. There was one dish that had the cutest smallest shiso leave that I've ever seen. I first didn't notice it, but while I was eating, there was this interesting combination of flavor that jumped out at me, that I looked more closely to see where it came from. The service was extremely attentive and not intrusive. The restaurant is small and you can look into the kitchen to see 8 people work diligently in the small kitchen. My only regret was that I didn't have cash to pay tips.

Yelp
There are no words to describe the food. In all my life I haven't experienced anything like this, EVERYTHING was perfect, food, service, wines, ambiance, ... This deserves a star!

Yelp
This is it. I came to Paris thinking I have to have the best dinner of my life somewhere in this city. I started looking around on Monday for a Saturday dinner for 1 but 9 out of 10 places I asked were all booked. I went on food blogs etc looking for a clue but didn't find anything I wanted so I decided to take a risk and try this place that opened 2 months ago. Probably one of the best decisions I made in 2014. I cannot imagine how hard it is for a Japanese chef to cook traditional French in Paris, which isn't rare but based on my experience can most certainly end dismal. The dishes here have fantastic flavors and every single cut of fish and meat was cooked perfectly. Waiters here do not speak English lol and I felt so bad for not being able to speak French/Japanese but they went out of their way to try to help me. I also loved the pull-out drawer holding utensils. Wine pairing was insane as well. Please. Just do yourself a favor and come here.

Yelp
Good at wire pairing. Amazing food and I will go paris again just for this restaurant.

Yelp
Last minute dinner reservation with the hubby in paris. Randomly found this michelin star restaurant and it was available. The quality of food is so good and the price is very decent. I would definitely recommend this restaurant ! I would eat here again if we ever go back to paris! 90 euros per person for michelin star quality!

Yelp
Great place. Food is definitely amazing as described by the other comments. Only issue is there is only 1 set menu which is effectively a tasting menu with 10+ courses and lasting over 3 hours. At the end of the night we were laughing nervously because it felt really endless. Yet I validate the 5 stars for the food quality and creativity.
