"Beloved Fairsted Kitchen bid farewell on New Year’s Eve, and Bowman—who loved Fairsted very much—chose to replace it so the space could continue to evolve rather than grow stagnant. I observed that he deliberately kept the 'bones' of Fairsted so the new Grassona’s wouldn’t be unrecognizable, and several continuities remain: staff such as bartender Emma Connolly and recipes and cocktails (including “Another Night in Brookline”) carried through, and Phil Dwyer, who cooked at Fairsted in 2014–2015, is now leading the kitchen at Grassona’s.
