"This Fremont bagel operation from the folks behind Rupee Bar goes beyond the basics—and we like it that way. Case in point: sesame bagels include aleppo pepper, lox sandwiches are packed with pea shoots, and vegetable cream cheese has chunks of roasted red peppers and lemon zest. It’s all undeniably pleasant smashed between the proprietary dough rings, which almost resemble pizza crust—mostly spongy throughout with a resounding crunch here and there on the bottom. But what really sets Old Salt apart is the fish, as we’d go to great lengths for their anatomically perfect lox. And when you consider easy online ordering and ample weekday availability, beyond-basic couldn’t be more attainable in the morning. "When the pandemic brought seafood restaurant Manolin’s sit-down business to a standstill, they zagged to bagels and lox. Manolin closed its doors earlier in 2024 but Old Salt lives on, serving up smoked cod, kippered salmon, and coho lox atop bagels that balance crispy exteriors with airy interiors. The fish is available by the pound or on masterfully made bagels, which are simultaneously crusty and chewy, with beautiful blistering. "Old Salt Fish and Bagels is a pop-up restaurant that emerged from Fremont’s Manolin, now offering a breakfast-focused menu. The menu includes bagel sandwiches with lox and other smoked fish, spreads like cream cheese with calabrian chili, urfa bieber, aleppo, and garlic, and a selection of coffee drinks. The focus is on locally sourced, sustainable seafood, including Neah Bay black cod, Idaho whole trout, and Keta and wild caught Coho salmon from the Nooksack Tribe. The establishment uses a Blodgett deck oven for bagel-making and went through two months of testing to perfect their offerings. The pop-up has been successful, selling out regularly since its opening. Co-owner Joe Sundberg hinted at the possibility of incorporating some items into the original menu when Manolin reopens.
