"When the pandemic brought seafood restaurant Manolin’s sit-down business to a standstill, they zagged to bagels and lox. Manolin closed its doors earlier in 2024 but Old Salt lives on, serving up smoked cod, kippered salmon, and coho lox atop bagels that balance crispy exteriors with airy interiors. The fish is available by the pound or on masterfully made bagels, which are simultaneously crusty and chewy, with beautiful blistering.
