That’s thanks to chef Eric Ehler, who left the fine-dining world to take on the more approachable realm of pizza. The shop skews toward thin crust, but there are also some tavern-style pies and granny slices to keep things fresh. Ruby Pie is the shop’s top-seller and it tips its hat to New York’s Rubirosa, combining trails of vodka sauce with marinara and pesto, and hits of mozzarella.
