Seattle’s New Restaurant Openings - Seattle - The Infatuation

"This former pop-up panaderia has found a spot inside City Hall making treats like earl grey blueberry conchas, white chocolate canela rolls, and chocolate yaupon orejas. It’s great news for early-rising office workers seeking pastries to get them through the day." - kayla sager riley, gabe guarente, aimee rizzo

Conchas Are So Good Right Now | Eater

"Founded by Mayra Sibrian to highlight pan dulce that reflects her Mexican and Salvadoran roots, this Seattle bakery blends childhood traditions with Pacific Northwest flavors. Offerings include inventive conchas such as PB&J and strawberry y queso picos, and a Dia de los Muertos–inspired pan de muerto made with totomoxtle (corn husk) ashes and dusted with marigold. The pastry program emphasizes cultural preservation while adapting to a new environment, presenting nostalgic breads with contemporary twists." - Jaya Saxena

Just had the pan de coco. Vowed to eat just half, but once I tasted its dulce de leche interior I was done. Worth every calorie. Can’t wait to return.

I got a delicious cafe de olla cold brew with soy milk and brought yummy pastries for friends- I'll be dreaming about the chocolate Yaupon Oreja, the mango cinnamon roll, & ofc the passionfruit blackberry concha until I can get mas pan ...WOWEE! I also got to get my sister a really beautiful gift from the artist shelves from the artist Domingo en la Luna, (who I learned from the barista that they also host workshops to make charm jewelry)! I could go on about this place! I will be frequenting! I love this gem & all the humans who are a part of making this wonderful bakery, cafe, art gallery, COZY space! I love how intentional Pan de La Selva community are in curating a welcoming, warm space it feels like home, & honoring Latinx culture & artists!

Mayra and her crew are some of the best bakers in Seattle and just good peoples. Pan dulce is moist and a little toasty, and the texture is just perfect. They offer coffee as well. I highly recommend any and all conchas lol, the semita and panela. I am positive just about anything here would be delicious though. This spot is right off Pioneer Square station and gives me the will to show up on my office days at work :,) Happy to have this bakery in the community 🪅

I'd been excited to try this place and it only exceeded my expectations! All the pastries we tried were delicious and the breakfast sandwich was spot-on. Flavors are so well balanced, complex and fun. We had so much trouble deciding what to try, so I'm sure we'll be back soon for more. The space is also comfy and welcoming!
