"In addition to Pizzarium, Gabriele Bonci has a panificio in the same neighborhood, serving equally fantastic pizza alongside sweets that will definitely spoil your appetite for dinner (speaking from experience). The pastries range from plump maritozzi to ricotta and sour cherry tarts, but the standout is Bonci’s oven-baked tiramisù—a moist mascarpone cake with a hint of coffee, encased in a chocolatey, cakey crust. The small shop also sells excellent loaves of grainy bread and high-quality bottles of olive oil." - annie replogle

"You'll find a mix of super-traditional Roman fare at Panificio Bonci, as well as creative items made with stone milled heirloom wheats. The star of the show, however, is the pizza bianca, Rome's signature flatbread, which is served in pieces or sliced open for sandwiches. "A ten-minute walk from Gabriele Bonci’s landmark pizza al taglio shop, Pizzarium, this 10-year-old bakery serves pizzas in various forms alongside spectacular breads and pastries. Their alla pala style is joined by pizzette (small pizzas) made either from puff pastry (a perfect savory aperitivo snack) or leavened dough disks. "Legendary pizzaiolo Gabriele Bonci's first bread bakery Panificio Bonci, which opened in November 2012, is legendary baker Gabriele Bonci’s bread bakery. Located in the Trionfale district—not far from Bonci’s famous pizza-by-the-slice joint, Pizzarium—the bakery sells loaves, sandwiches, and a handful of pasta varieties. There is also pizza by the slice (though a more conventional variety than you will find at Pizzarium) and pastries. Perhaps the greatest menu item, however, is pizza con la porchetta, a flatbread sandwich filled with slices of moist roasted pork and its crispy skin."
